Shrimp Etouffee II
This was an excellent dish that was almost too easy to make. Everyone who tryed it loved it. I did make a couple changes by using cream of shrimp soup and added scallops since I didn't have enough shrimp.

Enchilada Casserole III
This is a keeper. I too used canned enchilada sauce and black beans like other reviewers. Everyone who tried it liked it. To spice it up for those that wanted it a little hotter I placed sliced jalepenos on a portion of it.
