About this Cook
I am in the happiest time of my life. A wonderful husband, an 18yr old son that I am always very proud of and the sweetest new baby daughter, they make cooking at home a joy. We rarely ever eat out, it just doesn't compare to what we could've made at home ourselves. Yes, I said "we". My husband loves to cook & is very good at it. We clashed in the kitchen at first, because we each kept getting into the others dishes & seasoning them. Now we have learned to respect each others dish(keeping our hands off) :) & we enjoy eating both of our creations.
My favorite things to cook
Recently we have been making stuffed jalapeno peppers, experimenting with different recipes & techniques. So far, on the grill with hickory smoke chips or in the smoker itself, has been our favorite way. We grill steaks regularly! Homemade pizzas, sushi, cheesecake, you name it, we try it. :) I recently (sucessfully) made adobo from scratch, & an Argentinan Chimmichurri sauce.
My favorite family cooking traditions
We regularly make homemade pizzas! Yum! I make the dough, we all chop the toppings, & get the assembly line ready. We make individual size pizzas, they bake on a pizza stone (5 min or less) We use Italian sausage that my husband made.Homemade sauce from our garden. Garlic infused olive oil! We even bake them outside on the BBQ Grill in the summer, so we aren't heating up the house.(3 min & they're done) Our goal is to have an outdoor kitchen with a woodfire pizza oven. We also like to roll sushi together, it's fun. California roll style, mainly.(A japanese neighbor/friend from Tokyo taught me years ago.)
My cooking triumphs
As silly as this may sound, I truly feel that I finally know how to fry an egg at 40 yrs old. We went to our place at the lake & stayed a week. I was cooking on an RV stovetop that emmitted almost NO heat. THAT was the secret, low & slow with a little pat of butter! My stove at home must be too hot, even on low. How silly. But, hey, my eggs where 4 star restuarant quality. I'm proud of my eggs now!
My cooking tragedies
We were at the lake again, camping, and I decided to make stuffed jalapeno peppers, wrapped with bacon, on the grill. Our grill was placed on the rear side of the RV, so from our deck, you can't see the grill. Our neighbor came running over saying " I have NEVER seen a fire THAT big coming outta grill before" Sure enough 4 ft flames!WITH THE LID CLOSED! We all ate them anyway! Carbon must go well with beer! Won't try that again soon.

Chantal's New York Cheesecake
This was my first baked cheekcake I've ever made. This recipe made me feel like a pro, (which I am NOT, by any means.) I followed the directions and baked it in a water bath. ( I used a disposable slow cooker liner under the springform pan, as one of the reviews suggested.) & Let it cool in the oven 6 hrs then refrigerated. It was perfect! I couldn't be happier. Now that I know it's this easy, I may show off this new recipe and make one for the holidays! Thanks so much!
