 One of my favorite things about the Holiday Season is that moment when I approach the dairy aisle at the grocery store and see cartons of that creamy, flavorful eggnog! I love eggnog so much! Maybe a little too much...  You see, drinking eggnog is a very spiritual experience for me.… MORE

Mmmm. Fresh home-baked cookies!!
About this Cook
I'm Amanda. I live in Okinawa, Japan on the Air Force base. My husband and I are here for a three year tour. I love to cook and bake (obviously), and I am *so* thankful that my kitchen has a TON of counter space. I'm a beginner with cooking, still getting the hang of things, but I love experimenting. I prefer cooking with fresh, local, preferably organic foods if I can get my hands on some, but if not I'll still cook and bake and cook and bake anyway!
My favorite things to cook
Lately I've been fixing up a lot of Asain dishes and trying out new dessert recipes. My interests change a lot though, so in a week I may be trying home baked bread recipes. Who knows? Haha! (Actually, home baked bread does sound good :D)
My favorite family cooking traditions
My family will make the best breakfast casseroles and stratas for Christmas brunch.
My cooking triumphs
Once, I made a batch of muffins that I felt disappointed with. I felt the recipe was too bland and wasn't sweet enough. The next day, a couple of friends stopped by and tried the muffins. One of my friends immediately exclaimed that the muffins were "amazing" while the other friend told me that I had a "gift" with baking. After that the muffins didn't taste so bad to me either :)
My cooking tragedies
There were many, many times when I was younger that I would forget to put the sugar in cakes and other desserts. Oops! :) After a few nightmares, I've gotten good at remembering. Haha!

Chicken and Peppers with Balsamic Vinegar
This is delicious! I marinated the chicken in balsamic vinegarette all day. It has such a nice flavor. My husband and I had just had rice the day before so I served it with couscous instead. Great dish!

Blueberry Muffins I
These were okay. They certainly weren't bad, but I feel they need a little tweaking in order to make them *really* good. I made them just as written and you could taste the baking powder a little too much... I'm not sure if they need less baking powder, or more sugar...

Pesto Sauce
This pesto is soooo yummy and soooo simple. I had to halve everything since I only had a cup and a half of basil, but I kept the parmesan cheese at the full 1/4 cup. I don't think my husband was too crazy about it, but he's not into foods that are new to him and he had never heard of pesto before. I loved it! I'll definately make it again!
