BBQ Pork for Sandwiches

WoW! Not only was this excellent; it was simple. Followed the recipe to a "T" and it was moist, incredibly tender, and flavorful. A recipe we will certainly be using again!!!

Jumbo Fluffy Walnut Apple Muffins

Reviewed: Nov. 14, 2009
Very nice texture; airy, not thick or heavy! They were plenty moist too. I used Granny Smith apples were a bit tart, so I threw in a cup of white chocolate chips and that added a nice bit of sweetness they needed. Great recipe I'm sharing at a family reunion tomorrow and I will use again for the teacher's tea before Thanksgiving!!!

Beef Noodle Soup

Reviewed: Nov. 9, 2009
This was so simple to make. I used fondue meats pieces, as they are smaller and I find them to be more tender. Then I added some canned mushrooms for flavor. Added frozen peas for some color too. It seemed a bit bland while simmering, so I added more pepper, a bit of basil, and some sea salt. It turned out very good!!!

Easy Cheddar Biscuits with Fresh Herbs

Excellent! Moist, flavorful, and so quick! Omitted the mustard as I don't like any flavor of mustard and added some finely chopped pepperoni (as it went with the entree' I was serving). Great recipe!

Wild Rice Shrimp Bake

Reviewed: Nov. 2, 2009
This was so simple to prepare before work and pop in the oven after! As I noticed there wasn't any seasonings in the recipe, I used garlic pepper, black pepper, paprika, and sea salt. Also used chives as an onion alternative. It was good and pretty healthy. I added asparagus tips as well for some added nutrition. I also sprinkled with Paremsean cheese within the last 10 minutes of cooking. It was tasty and we'll use the recipe again.

Old-Fashioned Cheese Potatoes

Reviewed: Oct. 27, 2009
I actually made this recipe twice in the same week. The first batch was good; but bland. I added a lot more pepper, garlic, and some minced chives in my 2nd, and was more pleased! It made a nice amount for a family of four. Nice and hearty accompaniment for salmon loaf. I also left it in a bit longer and the potatoes were almost crisped on top; nice and brown while the center was cheesy and tender! A couple tweeks here and there and this was excellent

Mini Meatloaves

Reviewed: Oct. 27, 2009
I had no problem with the seasoning or the oats in this recipe. I should have used more beef, however, as they were tiny. I used my mini loaf pan and it only made 4. Otherwise it was a good recipe.

Pumpkin Bread IV

Mmmmmmmmm...what a great autumn bread! I added chocolate chips and nuts and made mini loaves. I had plenty for home, the kids to take to school, and send a couple with a friend. I liked this recipe as it wasn't heavy and thick. It was also seasoned properly for the fall...not too sweet.

Zucchini-Chocolate Chip Muffins

Reviewed: Sep. 22, 2009
Followed this recipe to a "T"; I felt no tweaking was needed and they turned out delicious! I made them in mini muffin tins for my daughter's class at snack time. They were gone! My daughter loves veggies so they weren't an issue for her; although I had to giggle to myself knowing all the other students had no clue and readily ate them up!!!

Chocolate Zucchini Cake II

Excellent version of a recipe I'd tried in the past. I took this to a picnic in slices from a bundt pan and it was gone within minutes!!! Extremely moist and the zucchini was well hidden from the watchful eye of my kids!!!

Momma Moots' Pork and Pierogies Casserole

Reviewed: Aug. 25, 2009
WOW! Am I glad I stumbled across this recipe today. Started out thinking I was going to make the same tired pork roast; then found this recipe! Followed almost exactly; with the exception of omitting the sour cream as I was out, but adding 1/4 cup more milk. Was plenty creamy though with the milk and cream soup. Also used thyme as I don't care for rosemary. And finally I chopped up fresh spinach for a healthier bite and some color! This was a great casserole for a healthy and unique choice. WILL CERTAINLY MAKE AGAIN!!!

Jalapeno Poppers I

WOW! I was kind of surprised how close these were to the ones served as appetizers in resturaunts. I used dried breadcrumbs instead, as I prefer the smoother texture of the coating. The inside was smooth, creamy and a great flavor match to the spice of the Japenleno. This batch was a trial run and will be made again tomorrow for Super Bowl. YUM!!!

Peach Pie

Reviewed: Jan. 31, 2009
Another 5 Star dessert! I used a 24 oz. bag of frozen peaches (as it's Jan. in western Pennsylvania and much fresh produce looks pretty sad!)and it turned out terrific. I added nothing of my own; followed this recipe to a "T" and it was delightful. I have to say it reminded me of true southern peach pie...just a touch tart but with a rich peachy flavor. I also used the whole pie crust on the top, adding a brushing of egg white for a nice browness. Great recipe I am sure we'll use again!

Pumpkin Chocolate Chip Muffins

Reviewed: Dec. 1, 2008
YUM!!! All in one word! I, too, added another 1/4 cup of pumpkin as it was what I had leftover and wanted to keep the moisture. I also added a splash of real maple syrup. I thought this might add some flavor because I'd had no dried spices left, other than cinnamon. It did add a bit of flavor and moisture. The cooking time went MUCH faster than listed too...just keep an eye on that. I used these at a bake fair this morning and heard many compliments! Would recommend these and this is a "keeper" at my house!

Brown Family's Favorite Pumpkin Pie

Reviewed: Nov. 18, 2008
AWESOME!!! My family loved this recipe. I guess I'd fallen into the rut of making "tradition" pumpkin pie, and was anxious for a change when I found this one. I didn't whip the whites as other reviewers hadn't; I don't feel it altered the texture Also omitted the ginger (as a personal choice). Fantastic all the way through. Didn't last long and this was just a trial run before Thanksgiving...it WILL be made again for the holiday!

Chicken Pot Pie IX

Reviewed: Nov. 10, 2008
This was kind of a surprise to me that it tasted soooo good. Not a big pot pie fan normally, but needed a hearty, hot meal for the family after snowy, outdoor activities. This was SUPER! The chicken was very tender; the boiling in water helped. I took the advice of other reviewers and added extra liquid and seasonings. I had a turkey rub that I sprinkled in...perfect blend of rosemary, sage, thyme, garlic, and pepper. My kids liked it a bunch too! Served with red skinned mashed potatoes, it was a perfect fill-up for us!!!

What a delicious AND beautiful dessert!!! I took this to a teacher appreciation luncheon but opted to do a berry mix only. Strawberries, blueberries, raspberries, and huge blackberries. The teachers loved the treat and the rich colors of the berries was a nice presentation!

Easy Apple Crisp

Reviewed: Nov. 2, 2008
This recipe was very good and super easy. The only thing I would like to tweek a bit next time is the topping. I found it a bit dry and plain. Too much like the cake mix it is. I prefer somehting more moist and crumbly or streusel-like. Worked well as a recipe to use on the fly one busy day, but i'd change the topping to be more "hearty"; less flour-y/cake mix like.

Hearty Meatball Soup I

I also added rice and green beans to the mixture. I had to add some extra broth as it wasn't nearly enough liquid by using just what's required in recipe. Overall, the taste was very good and was hearty enough on a cold night served with warm homemade bread!

Chewy Peanut Butter Brownies

Reviewed: Oct. 27, 2008
My family FLIPPED for this recipe!!! I added Hershey's mini kisses to the top at bake time and they melted a bit and added enough chocolate to the peanut butter...it was a great combo! Watch the cooking time though; I opted for less and my brownies were soft, moist and chewy. DELICIOUS!!!
