About this Cook
I am a working, stay-at-home mom of 3. My daughters are 8 and 6 and my son is a sophomore at West Virginia University! I live for my kids and our time together. I enjoy outdoor activities, volunteering, dinner and social parties, movie nights, and yes...SHOPPING! I love to cook and bake both, although baking is something I share more frequently with friends. I work seasonally in managment at a country club and have learned many great tips and cooking methods from our chef.
My favorite things to cook
I love trying new recipes and refer to this site several times weekly! Our favorite dishes at home are Mexican, Italian and Mediterranian options. I opt for chicken and fish/shellfish recipes most as they are healthier. We are big spice, seasoning, and marinade fans and we joke here, "You can't use enough garlic". I love baking and bake frequently to give to friends, teachers, or neighbors. I don't have to keep my baked goods...I just like the baking enough I'll share! I resort to crock-pot meals weekly too as we are a BUSY family and preparation/clean-up is a breeze!
My favorite family cooking traditions
I would say, cooking with my mom. She is from France and has great culinary skills! Picked up many ideas from her. She also has a nice knowledge of wine...and that's a good thing! :-) I love baking with my kids as they enjoy everything from cracking the first egg to licking the spoon when we're done!
My cooking triumphs
I take every compliment and/or rave from anybody to be a cooking triumph, especcially on new recipes. Knowing the recipe is a hit and something we'd like again is rewarding.
My cooking tragedies
Meatloaf!!! I know, I know; it's relatively simple right? Well, I've tried meatloaf recipes so many times (beef and venison) and they flop for me each time. Just the one thing I cannot make! I can do souffle'. I can do flaming desserts. I can do ethnic recipes to no end. But meatloaf gets the beter of me!

Jalapeno Poppers I
WOW! I was kind of surprised how close these were to the ones served as appetizers in resturaunts. I used dried breadcrumbs instead, as I prefer the smoother texture of the coating. The inside was smooth, creamy and a great flavor match to the spice of the Japenleno. This batch was a trial run and will be made again tomorrow for Super Bowl. YUM!!!

Peach Pie
Another 5 Star dessert! I used a 24 oz. bag of frozen peaches (as it's Jan. in western Pennsylvania and much fresh produce looks pretty sad!)and it turned out terrific. I added nothing of my own; followed this recipe to a "T" and it was delightful. I have to say it reminded me of true southern peach pie...just a touch tart but with a rich peachy flavor. I also used the whole pie crust on the top, adding a brushing of egg white for a nice browness. Great recipe I am sure we'll use again!

Pumpkin Chocolate Chip Muffins
YUM!!! All in one word! I, too, added another 1/4 cup of pumpkin as it was what I had leftover and wanted to keep the moisture. I also added a splash of real maple syrup. I thought this might add some flavor because I'd had no dried spices left, other than cinnamon. It did add a bit of flavor and moisture. The cooking time went MUCH faster than listed too...just keep an eye on that. I used these at a bake fair this morning and heard many compliments! Would recommend these and this is a "keeper" at my house!
