Candied Sweet Potatoes

Sweet potatoes turned into bite-sized bits of heaven. Yum! I followed the recipe exactly (I boiled my potatoes) and wouldn't change a thing!

Easy Indian Butter Chicken

Very tasty and very simple! I followed the directions as they were originally written, but after reading others say they reduced the salt, I bought unsalted butter but added in salt per the directions. The only other change I made was the garum masala - I couldn't find it. I looked all over the supermarket and it was no where to be found. I will have to visit an Indian foods market soon to buy some I guess. So, since I didn't have any, I added in some cumin in its place. The dish came out wonderful and everyone at the table raved. Thanks for sharing this delightful dinner!

Cha Cha's White Chicken Chili

I almost followed the recipe exactly - only changes are that I left out the green chiles (didn't have any) and used 3/4 lb. of monterey jack cheese. Next time, I might use only 1/2 lb, but I felt that 1 cup was not enough. I felt the spice level was great - the jalapenos certainly added a kick, but was not at all overpowering. My whole adult family loved it and has already requested I make it again soon!!

Shrimp and Asparagus Casserole

Overall a tasty dish that easily serves a family of 4 with plenty left to spare. I used fresh asparagus, and got the smallest, most tender stalks that I could find. My whole family enjoyed this and I am sure I will make it again.

Egg Salad Sandwiches

What more can I say other than this was the best egg salad I have ever had - homemade or storemade! I made very few adjustments, and only due to lack of supplies ... I used 3/4 c. mayo and 1/4 c. miracle whip; and I grated about 1/2 of a small onion because I have no onion flakes and then used onion salt instead of regular salt. I ate it on rye bread and it was absolutely a wonderful lunch!

Baingan Bharta (Eggplant Curry)

I followed the recipe exactly and didn't really care much for this dish. Maybe I am too accustomed to Butter Chicken and Chicken Marsala and so a dish with only Eggplant was just not for me? Not sure - but either way, I doubt I will make this meal again. However, for a quick and simple version of Naan, I just put pieces of pita bread on a pan, some butter and minced garlic on top and placed in the oven at 350 for 10 min. or so. Not quite the same as the real thing, but a great and fast substitute!

Ham Cheddar Chowder

I added in a can of creamed corn and a can of regular corn. Also, about 1/2 c. of extra cheddar cheese and 2 jalapeno peppers. Some extra salt and some garlic salt and "voila" - wonderful soup! This soup thickens very nicely and is hearty and tasty for a great fall or winter treat. With all the cheese kids should love it too!
