Very, very good. I mixed it by hand only and the texture was very good. I would add more garlic next time though. The sauce was very thin and runny, but I used fat free milk and splenda so that may be why. The flavour was great though, and I just ate it open faced (onion and tomato on top) with a fork and knife due to the messiness of it all (I split the pita in half to reduce the carb intake as well). Delicious.

Stuffed Green Peppers

Very good but I did make some changes. Used brown rice. Fried an onion with some garlic before adding to beans and rice. Also added a bit of cumin and about 2 tbsp of fresh cilantro. Put can of tomato sauce right into the bean rice mixture before stuffing the peppers. Only sprinkled cheese on top, not inside the peppers to cut down on fat and calories. Great base recipe to play with. I will probably add more veggies next time to cut down on the beans and rice. Cooked in the microwave in about 30 minutes, then sprinkled cheese over top and put on for another 2 minutes.

Middle Eastern Rice with Black Beans and Chickpeas

Very good. Used the recipe calculator and only made enough for 2 servings (made a cold bean salad for the next day with the leftover beans). We didn't add quite as much cilantro because one of us isn't a big fan. We added slivered almonds instead of pine nuts and it added a nice texture. Will definitely make again.

Blue Cornmeal Pancakes

Very good, but I made some changes. Used yellow cornmeal, a mashed banana instead of butter, and all milk instead of using water. I mixed all the dry ingredients in the bowl, then added the wet ingredients - cut down on the dirty dishes. It turned out very well, and I'll definitely make again.

Quinoa and Black Beans

Definitely a keeper. Discovered at the last minute I was out of cayenne so substituted about a teaspoon of hot sauce. Also, only added one can of beans, and used a can of corn instead of frozen because that's what I had in the house. Delicious!

Pork-n-Beans Cake

Made this with some substitutions. Used whole wheat flour, beans in tomato sauce (it's all we had and eat) splenda and mostly applesauce with maybe 3 tb of oil. Also added more cinnamon than called for, and some nutmeg. Cake was very good and will make again, with some more revisions. I will add quite a bit more seasoning next time - cinnamon, nutmeg, pumpkin pie etc. This made 2 - we added nuts to one. It was our favourite so will add more nuts next time.

Tex-Mex Turkey Soup

Excellent! I did what other reviewers have done and just dumped all the ingredients in the crockpot. I like my food spicy so used hot chili powder. I didn't have any corn, and am eating a lower carb diet, so I just left it out. I used a tetra pack of chicken broth, and one packet of chicken bouillion, but no water. I added the sour cream, cheese and cilantro to my bowl, but I like it just as much without so won't bother with the added things at the end next time. It turned out great - I'll definitely make again - I think it would be good with other leftover meat such as chicken too.

Whole Wheat and Honey Pizza Dough

I used my bread maker so substituted for 2 teaspoons of bread machine yeast, and put ingredients in per the instruction on the bread maker (liquids first, yeast last). We really liked the crust. It made enough for 2 very thin but large crusts. We will definitely make again.

Beef, Green Chili and Tomato Stew

Slow Cooker Adobo Chicken

I didn't care for this at all. I added the bay leaf and peppercorns as suggested, but it just tasted like soy sauce and vinegar sauce over chicken. Very salty.
