About this Cook
i am not a P/C type person some that know me compare me to the character of dr house on the show of the same name i am one who you either like or hate i hate using things like cream of can soups, sauces in jars (they put sugar in that ) etc.. i am VERY fussy about making thing taste right and my taste buds are Much more sensitive than about 98% of the people here the amazing thing is i am married for almost 30 yrs and she puts up with all my .
My favorite things to cook
anything i go thru my cookbooks and my wife and i decide what country we want to visit that weekend and i cook accordingly
My favorite family cooking traditions
my fav is x-mas eve i came from a catholic/italian backround (although i never go to church) we keep with the cath/ital thing of the feast of fish on xmas eve the thing is it is supposed to b 7 diff fishes so i make all seven 7 ways each and we have an open house with people in and out all night i look forward to this and prepare for it the whole yr

my first real triumph was duck le'orange when i was about 10
My cooking tragedies
not really a tragedy per say but my wives fam (for those of you old enough to remember the tv show Green Acres) they took cooking lessons from that and we spent many times on the porcelan thrown after

spicy yes really hot no not at all eliminate the sugar you will fing that the combo of sweet basil and the sweet onion is more than enough

Cheesy Sliced Potatoes
very very nice if you are watching your sodium check the amt in your fav brand of chick granules some brands being very high in sodium you can safley omit the 1/2 tsp of salt without any sacrifice in taste

Zucchini Parmigiana
great recipe we have made this (similar) for 50 yrs the only thing we do diff is we use 4 whole eggs to dip the zucchini in. but swapping out the cheeses or not breading the zucchini it is not the same (and) i dare say not as good as this is
