Breakfast in Bangkok

So Good - we usually make a drink like this without the coconut milk and it's one of our favorite juicing staples! The coconut milk made it over the top yummy. Unfortunately today I couldn't find our fresh Ginger (go figure!), so I had to do without and it was still delicious. Next time, I'll make sure to add it. BTW, I always juice my ginger with my other veggies/fruits too.

Homemade Butter

The best! I had some heavy cream left over from Holiday Baking/Cooking that I didn't want to just throw out. I came across this recipe and faintly remembered making homemade butter in kindergarten and how extremely delicious it was. I am so glad I made this! It's so much more flavorful that regular butter from the store, and the fact that it is fresh and homemade... Bonus!! Just make sure you rinse the butter well after draining off the liquid (keep the liquid for any recipe asking for buttermilk) or else your butter will go rancid and from what I've read, adding salt helps the butter "keep" as well. I knew I wanted to make something to go with this butter right away, so I made J.P's Big Daddy Biscuits also from this site. My eyes literally rolled into the back of my head - a match made in heaven!! Thank you!

J.P.'s Big Daddy Biscuits

My favorite biscuit recipe of all time! I've made this countless times, and consistently get the fluffiest, fattest, moistest biscuits. The only thing I do differently is use real butter, not shortening (personal preference), and make sure to ONLY use enough milk until the dough pulls away from the sides of the bowl - usually not the entire amount. I actually just pour slowly straight from the milk carton until I get the desired texture I'm looking for. Today, I made homemade butter (also from this site) and whipped up these biscuits to smear the butter on. I couldn't think of a better counterpart and my eyes literally rolled into the back of my head at first bite. Thank you J.P. for such an amazing recipe. It will always be my go to for the most amazing biscuits!

Buttermilk Syrup

Heaven...seriously. So so good. Made exactly as written. I had a huge jug of buttermilk left over after making my cousin's b-day cake and no idea what to do with it. Came across this recipe and really wasn't expecting too much because who ever thought of making a syrup out of buttermilk!?! (yes, I'm sheltered)..but this was creamy, caramel-y, deliciousness. I put this over buttermilk pancakes and it was fabulous, but I also make a delicious baked french toast from this site that I think this would be perfect on as well. YUM and THANK YOU!

Baked Apricot Chicken

I would rate this maybe 3 stars just for the ease, taste-wise I just didn't find it something I would make again. My husband rated it a solid 3 for taste and said it was pretty good, but on the bland side. He grew up eating really bland food so this may have been something he was used to. I don't know - it just wasn't for me.

Strawberry Oatmeal Breakfast Smoothie

Yum! The first time I made this (years ago!), I did so as written and was put off by how the oatmeal felt in my mouth. I tried it again today because I wanted a really filling breakfast smoothie, and decided to finely grind the oats into powder before adding it to my smoothie ingredients. Oh my!! What a difference. Rich and creamy and so good. I didn't have a banana, so just used all strawberries, used regular lowfat milk and also didn't want to use sugar, so used some organic honey. Fabulous!

Sesame Pasta Chicken Salad

I made this for dinner last night and it was so delicious. Even my picky kids licked their bowl clean. I made the recipe as stated, not changing a thing. The recipe says that it will feed 10 people - maybe as a side dish, but definitely not as a main meal. It fed my husband and I and two 8 year year olds, one 6 year old and one 3 year old, with a little bit left over for my hubby to take for lunch. My 3 year old woke up this morning asking for the pasta for breakfast, so for lunch I whipped it up again. The first time, it marinated for about 6 hours and this time I didn't let it sit and marinate at all. Still so good! I'll be making this one again and again.

Real Chiles Rellenos

I was almost 110% positive I would fail at this recipe, but the directions were clear and the results were absolutely fabulous. Time consuming, but worth the wait. I've never had Chiles Rellenos before (gasp! I know), but these tasted fantastic and we'll be making these again in the future :). Thanks!

Caramels

The first time I made these (yesterday) I halved the recipe and ended up with a disaster. I don't know what happened, but it scorched :(. Made it again today with the full recipe and it came out DELICIOUS. I re-calibrated my thermometer just to be sure this time and I stood over it stirring constantly. Took 45 minutes if not more and my arms are sore, but it was worth it. Just an FYI, this caramel is extremely chewy, so if you're looking for something softer, this may not be it. But the taste is fabulous. And I forgot the vanilla (oops), but still tastes wonderful. Next time I'll add the vanilla for sure.

Hot Fudge Sauce

Candy Coated Pecans

I have a similar recipe that I have been making for a few years, but can't find anymore. This one is pretty close, and plenty good. I doubled the coating, adding a bit of cinnamon and a bit more vanilla. Because I doubled the coating, I added about half a cup extra pecans. I like my pecans coated very well, but I hate wasting good coating that ends up as crumbs after being cooked since it is not covering anything. I got extra candy coated pecans out of it, so it was a win for everyone in my family. Also, I usually cook for longer than 10 - 15 minutes and at a temp of 300 - I just keep stirring every 5-7 minutes to make sure all the pecans are being cooked evenly and the coating is evenly distributed. I probably do this 4 times so I cook my pecans about 20-25 minutes. You can tell when they are done. They lose the wet shiny look.

Baked Potato Soup

Delicious! Didn't have cream, so used whole milk in place of it. Didn't have basil so I just skipped it. Used morningstar veggie bacon. My kids (especially my 2 1/2 year old) loved it. As I do with all of my cream based soups, I added about some red wine vinegar after I took it off the heat. I'm not sure how much - maybe 2 teaspoons... I'm not sure what, exactly, the red wine vinegar does, but it gives cream based soups that extra depth. So good.

Special Lobster Bisque

Needed a quick and easy dinner and this one fit the bill. We ended up using frozen langostino tail meat which I used in place of the lobster. Also, I had no celery salt and no cream. I just used 5 cups of whole milk. The bisque was so creamy and flavorful with all the butter and whole milk, I didn't miss the cream anyways. And as I do with all of my cream based soups, I added about 2+ teaspoons of red wine vinegar when I took the soup off the heat. I'm not sure what it does exactly, but it gives all cream based soups extra depth. Soooo good! It hit the spot on this cold day!

Authentic Huevos Rancheros

Nice recipe. My hubby LOVED this, and I thought it was pretty good as well. I made a ranchero sauce from scratch instead of using salsa and we only had flour tortillas instead of corn tortillas so I just warmed them up, not fried them. I also used morningstar veggie bacon. MUCH lower in fat than the original recipe, but still bursting with flavor. We actually ended up eating these again for dinner a few nights later because it was so easy to make. I had some cooked, chopped shrimp from dinner the previous night and I threw that on top as well the second time. Yummy.
