Aunt Teresa's Chicken

Reviewed: Oct. 18, 2009
This was an excellent starter recipe. I just happened to buy a package of chicken thighs today. I usually will make a recipe exactly as described; however, I knew when reading this one I had to add some extras. I layered the vegetables just as described; however, I added alot of spices. On top of the chicken I sprinkled oregano, thyme, seasoned salt, pepper, rubbed sage and garlic powder. I mixed the mushroom soup w/ 1/2 cup milk and mixed. I poured the soup over the chicken and cooked for 2 hours and broiled for 8 mins. It was fabulous!!!! Thank you for a great starter recipe!

I truly do not like to leave bad reviews, and usually do not; however, this soup is really bad. Very bland which was a surprise due to all the spices that were used. I even put a ham hock in the soup and still very blaaa. Sorry

Navy Bean Soup

Reviewed: Sep. 22, 2009
This soup was very tasty and I really enjoyed making it; however, it was a bit bland and very watery. I doubled the spices and had to use 3 times the amount of potatoe flakes to give it some kind of a consistency. I will make it again with less water. Still an excellent soup. Thank you for a great recipe!

Boudreaux's Zydeco Stomp Gumbo

Reviewed: Feb. 25, 2009
And the oscar goes to the person who submitted this recipe!!!! Holy jumpin crawfish was this awesome and so fun to make! Not for the beginner I asure you. Making the roux was a little scary. I kept adjusting the heat afraid I was gonna burn it but it turned out perfect! When you add the minced garlic it will scare you cuz it pops and sizzles but it's ok.. just keep stirring. I don't like shrimp so I chopped up two lobster tails and added those during the last 10 mins of cooking. I didn't have a red pepper so I used crushed red pepper instead. Whoo Wee! what a bite. Absolutely fab. Serving it with white rice and french bread tonight. PS. I double the chicken.. just didn't seem like one cup was enough. Can wait to take this to a pot luck.

Italian Style Meatloaf I

Reviewed: Jan. 5, 2009
This was really good. Not as fab as I thought it would and took much longer to cook than described. The only things I changed was that I added 1/2 a tube of Jimmy Dean Sausage and used fresh garlic and not garlic powder. It took One hour and 45 mins to cook! I had to drain the grease from the loaf 4 times.. very greasy. I didn't have any bread crumbs on had so I mashed up a cup of low fat saltines. My husband said it was the best meatloaf he had ever had! Maybe just a twist on the taste buds for me. I'm so used to making my moms basic recipe. Oh.. I forgot. I also added chopped onion and green pepper. What is a meatloaf without them! I will try it again. Thank you for a really good recipe.

Chicken Soup III

Reviewed: Jan. 2, 2009
So Easy So Good!!! Best chicken soup I've made. I had a chicken left over from last night and some frozen chicken stock from a previous recipe. I made just as described but only boiled my stock for two hours because the chicken from last night had so many spices in it and bc I added my own stock. I used 1 full cup of rice and did not add the extra tsp of salt. It turned out fabulous!!! Thank you!

Hoppin' John

I am from the south and have always wanted to make this dish. My aunts make the best pots of beans. I love when I go home to visit they always have a pot of somethin stewing in the kitchen. Ok..This dish was excellent but took alot longer then expected. I used water and chicken stock. The ham hocks were soooo good. I added a can or rotell diced tomatoes with green chilis to kick it up and lots of garlic.. I gotta have my garlic. Next time I will soak the beans and cook the rice seperately and then combine all. Very excellent dish with cornbread and a salad. YUM!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 1, 2009
This was the best sauce and meatballs I have ever made. I do have to admit, I took liberty with some additional spices for the meat balls and added cream to keep them moist. I used fresh minced garlic, and minced fresh oregano, basil and some time and added to the meatballs. I also browned my meatballs in EVOO before adding to the sauce. I did not use sugar. I made the sauce just as directed but added fresh chopped basil. I used half of the recommend onion. Also I used two turkish bay leaves. They have such a beautiful aroma. Instead of Parmesan cheese I used Asiago, Romano and shredded chedder cheeses. Absolutly fabulous base for a recipe. Thank you!

Chicken Piccata III

Reviewed: Dec. 14, 2008
This is the absolute best chicken piccata I have ever made. I didn't follow the recipe exactly. I sauted the Chicken in olive oil and butter.. but I used an egg/flour/egg wash first before placing in the pan. After browning, remove the chicken to a paper plate with a paper towel to drain the excess grease. Into scrapings add 1 cup white wine (chicken broth if you don't drink)be careful as it is very very hot..whisk briskly over med to high heat.. to that add the juice of one lemon, mushrooms, capers, 1 cup chicken broth and 1 table spoon of flour. Continue to whisk briskly to break up flour. Once you get your rue to a medium consistency, place chicken in pan.. turn over to coat both sides. Chop 8 artichoke hearts very well and sprinkle on top of Chicken. Take one lemon cust in half and place once on one side and the other on the other side. Cover and simmer on very low heat for 20 minutes. Place chicen on plate and spoon sauce mixture over chicken. Best ever!! Thank you for a great recipe!
