Slow Cooked Corned Beef for Sandwiches
This was great. The meat melted in our mouths. Don't skip the garlic or beer, it really made the dish. One brisket fed 5 of us with no leftovers, so suggest you make two if you want to make sandwiches.

Creamy Chicken and Wild Rice Soup
Very quick and easy. I converted it to make 8 servings. It called for 1/2 cup butter and 3/4 flour, it didn't need that much roux, it was way too thick. I would use 1/4 butter and 3-4 Tbl flour. The one box of rice was not enough for 8 servings so I stirred in some instant brown rice, and Viola it was great!

Wienerschnitzel
Very good! I used Pork Cutlets and Panko bread crumbs. Watch carefully when frying they brown real quickly. The lemon works very well! I served this with New Potatoes sauteed with butter and parsley.
