Southwestern Black Bean Stew
Very Yummy! I found this just by typing ingredients that I had on hand. I used tomato sauce instead of paste. I also added a can of Rotel Diced tomatoes and used mexican corn instead of plain corn. Will definatelymake this again!

Pat's Mushroom Saute
Exactly what I was looking for! I did not make any changes (except I used whole mushrooms and broke them in half) Yum Yum!

Summertime Baked Tomatoes
After eating, I felt like i waisted a lot of good ingredients. I like everything in this dish, but the flavor was blah. I will not be making this again.
