Chicken Pot Pie IX

With or without my change, it is still the best Pot Pie. All I did differently was cook the chicken a little, first, in peanut oil and then I put it in water with the veggies.

Sally's Spinach Mashed Potatoes

Roasted Red Pepper Chicken

This was absolutely wonderful! This has become one of my family's favorite ways to each chicken breasts (we personally like dark meat). I did not have to alter this recipe in any way, it was perfect.

Very satisfying. I used 5 large russet (baked) potatoes. I carved out the insides as well as added some skin into the soup. I also used 4 cups of 1% low-fat milk and 2 cups of chicken broth and used less cheese (8oz instead of 10oz). Family loved it. Definitely a keeper!
