I am a mother of 4 children (3 are step children), and a wife of a wonderful man. I am currently a stay-at-home mother with a side job as a romance consultant through Slumber Parties (www.slumberpartiesbytanyacooper.com), and have been pursuing an education in the field of Psychology.
My favorite things to cook
I am new at cooking, and have been using family recipes since I have started. I make a really good meatloaf, spaghetti, mushroom with roasted red pepper soup, vegetable soup, oven-baked ribs, sauteed vegetables, breads, a little bit of this, and a little bit of that...
My favorite family cooking traditions
Our family goes "all out" with Thanksgiving-this is my favorite gathering. We all have our own recipes, including a stuffing made from scratch. So it's more of a big pot luck. My family's cooking influence mostly comes from the Irish, Scottish and Italian. We are very Celtic, and stick true to our heritage with cooking.
My cooking triumphs
So far I have the meatloaf and spaghetti mastered. The next on my list are Soups and Stews. I am also learning how to use the BBQ more and more lol!
My cooking tragedies
11/5/09: I tried to save a dollar by buying "Nucoa Margarine" instead of Parkay to use in my ingredients for Nestle Toll House Choc. Chip Cookies... HUGE mistake. All my proportions were right, but I guess Nucoa is wayyyy too oily. The cookies were a nightmare. I couldn't stop laughing at how they turned out!

Sally's Spinach Mashed Potatoes

Roasted Red Pepper Chicken
This was absolutely wonderful! This has become one of my family's favorite ways to each chicken breasts (we personally like dark meat). I did not have to alter this recipe in any way, it was perfect.

Baked Potato Soup V
Very satisfying. I used 5 large russet (baked) potatoes. I carved out the insides as well as added some skin into the soup. I also used 4 cups of 1% low-fat milk and 2 cups of chicken broth and used less cheese (8oz instead of 10oz). Family loved it. Definitely a keeper!
