Hot Artichoke and Spinach Dip II

Awesome recipe!!! So quick and easy! The only changes I made were that I used Asiago cheese instead of Parmesan because that's what I had on hand. Very similar flavors and turned out wonderfully. I also used light mayo and light cream cheese to cut down on the fat. I highly recommend this recipe. Even better than the previous spinach artichoke dip recipe I made from this site. Definitely a keeper!

Spanish Flan

I made this with my son for his Spanish project. Per reviewer suggestions, I added an additional egg and let it cook for 15 minutes longer because it was still very uncooked in the center. It came out perfect and his teacher raved! This was SO simple, much more so than I expected. Will definitely make again! I'm thinking cream cheese to the mix would be wonderful as well.

Baked Teriyaki Chicken

OMG! I made this last night for my family and it was a hit! My changes...I doubled the glaze to begin with (you can always freeze any leftover). I used seasoned rice vinegar since I was out of apple cider vinegar. I also used brown sugar per other reviews, the change made sense to me with the combined flavors. I substituted lite soy to cut down on the sodium (a must). Also, I added a can of crushed pineapple. If you add the pineapple, cut back on the sugar. I had chicken breasts on hand and threw in some chicken legs for the kids (all skins removed). ***MAKE SURE you line your pan with aluminum foil! I'm still scrubbing my stovetop with oven cleaner because of spattered glaze. I can only imagine having to clean an entire pan! I served with steamed rice and broccoli for sides. Better than any restaurants at a fraction of the cost. Thanks for the recipe... SO easy and delicious!!! :)

Speedy Oven Fudge

I followed this recipe exactly. I've always made fudge the "hard" way...and was pleasantly surprised with the results of such a simple recipe! This is very rich, so a little goes a LONG way! My kids loved it and I will definitely make my fudge this way from now on. Thanks for the recipe!:)***UPDATE: I added a layer of peanut butter on top for a change...my kids and hubby devoured it. My kids said it was like peanut butter cups. Yummy!

Mexican-Style Goulash

This is a quick and easy recipe. After following the recipe to the T, I felt it needed some extra spice for my liking. I added a can of Rotel tomatoes and chilis. I then added 2 cloves of garlic, 1 Tb. cumin, 1 Tb. paprika, and 1 tsp. cayenne pepper (I'm from Texas...and we like our spice!). I also added extra chili powder. I garnished with chopped cilantro. With these additions, I'm giving 5 stars. My husband says its a winner. I think adding a can of drained ranch beans would be good too...will try that next time. Thanks for the recipe!

Fresh Tomato Salsa

This is a recipe known to me as pica de gallo. I use less serrano (2-3 depending on size...or even 1 large one, adjust to taste). Serranos tend to be very small. Also, use roma tomatoes for less acidity. This is also a great base recipe added to mashed avacado and extra lime juice...commonly known as guacamole! Yummo!

Veronica's Hot Spinach, Artichoke and Chile Dip

Definitely cured my spinach dip craving. This is even better with the added kick from the jalapenos and chilis! I used reduced fat cream cheese and light mayo. I also used one whole jalapeno, chopped along with the jarred. Delish! Thanks for the recipe! I will make this again and again:)

Waldorf Tuna Salad

I made this today for lunch. I didn't have the dates, so I used dried cranberries instead which was good. Also, I used pecans instead of walnuts. The results were very good and made a yummy meal served on greens...but I decided I wanted to jazz it up a little to really suit my taste. I added a little low fat sour cream, 2 tbs. dijon mustard, two baby gherkin pickles diced (sweet relish would suffice), and 1 tsp. garlic salt. Jackpot! Can't wait for my hubby to try it:) Update: My husband raved, so it's a keeper!

Roasted Brussels Sprouts

This was good. MUCH better than boiling or steaming. Unfortunately, my kids still shunned the dreaded brussel sprout. I loved it! A keeper for me anyway:)

Chinese Chicken Fried Rice II

Really good recipe! Quick and easy to make. You can switch out the meats to your liking. Shrimp is great in this! Thanks for the recipe:)***Update, I sauteed other veggies with the onion...broccoli, snow peas, carrots etc (whatever you like)...turned out great. I also omit the butter (use only EVOO and always add garlic. Cilantro is also a tasty garnish to this dish!

Chuck's Favorite Mac and Cheese

This was WONDERFUL! Not like your traditional southern mac n cheese but SO tasty! My husband and kids loved it. Even my picky 4 year old liked it(trust me, that speaks VOLUMES!). I didn't realize I was out of elbow macaroni, so I used whole wheat egg noodles instead. I did used all natural light sour cream and mixed in some milk before adding the bread crumbs. I could tell it would have been too dry otherwise. This is a definite keeper in my household! Thanks for the recipe:)

World's Best Lasagna

I was really looking forward to this lasagna since it got such awesome reviews. It was good but I still prefer my own tried and true lasagna. My family agreed. Perhaps its because I'm from South Texas and expected more spice or flavor.
