About this Cook
I'm a mom of 4 kids (2 teenage boys and 2 toddler girls)...all picky eaters with the exception of my foster daughter (4 yrs old)...she will eat anything! I love to cook. My husband is my "guinea pig" a lot of times. However, he doesn't complain:).
My favorite things to cook
My favorite is Mexican quisine followed closely with Asian. Of course, good ol' Southern food from my neck of the woods. I will experiment with any great recipe from any part of the world. I try to make great recipes healthier for me and my family by making small modifications in ingredients (such as, instead of a stick of butter, half olive oil and half butter). You cannot tell the difference!
My cooking triumphs
I make a chicken enchilada recipe that is to die for! My lasagna is the best recipe I've found (and I've tried many). My homemade chili is also a popular request with my family and friends.
My cooking tragedies
My first attempt at making biscuits. I used all purpose flour, without baking soda or salt. My mother used self rising, of course. I was 19 "all purpose" made sense to me when I was first on my own and buying the flour. They turned out like rocks and I am still teased to this day. (Hey, I was only 19!)

Hot Artichoke and Spinach Dip II
Awesome recipe!!! So quick and easy! The only changes I made were that I used Asiago cheese instead of Parmesan because that's what I had on hand. Very similar flavors and turned out wonderfully. I also used light mayo and light cream cheese to cut down on the fat. I highly recommend this recipe. Even better than the previous spinach artichoke dip recipe I made from this site. Definitely a keeper!

Spanish Flan
I made this with my son for his Spanish project. Per reviewer suggestions, I added an additional egg and let it cook for 15 minutes longer because it was still very uncooked in the center. It came out perfect and his teacher raved! This was SO simple, much more so than I expected. Will definitely make again! I'm thinking cream cheese to the mix would be wonderful as well.

Baked Teriyaki Chicken
OMG! I made this last night for my family and it was a hit! My changes...I doubled the glaze to begin with (you can always freeze any leftover). I used seasoned rice vinegar since I was out of apple cider vinegar. I also used brown sugar per other reviews, the change made sense to me with the combined flavors. I substituted lite soy to cut down on the sodium (a must). Also, I added a can of crushed pineapple. If you add the pineapple, cut back on the sugar. I had chicken breasts on hand and threw in some chicken legs for the kids (all skins removed). ***MAKE SURE you line your pan with aluminum foil! I'm still scrubbing my stovetop with oven cleaner because of spattered glaze. I can only imagine having to clean an entire pan! I served with steamed rice and broccoli for sides. Better than any restaurants at a fraction of the cost. Thanks for the recipe... SO easy and delicious!!! :)
