Sole In Butter Sauce
With the modifications that other reviewers suggested this was terrific. Cutting the butter in half also makes it healthier...an added bonus. I used frozen fillets from Costco and this sauce made them taste like a gourmet dish.

Busy Night Turkey Taco Soup with Avocado Cream
A good quickie for busy nights! I substited cubed roast beef (as that was the left-over meat I had on hand) and used frozen corn instead of canned. It had great flavor! Serve with the usual Mexican toppings (guac, sour cream, tortilla chips, etc.) The boys loved it!

Sweet Corn Bread
A bit too "gritty" for my taste. I prefer the recipe on the Albers Yellow Corn Meal box.
