Mango Cake
I loved this cake, I cooked it in a bundt pan and I used lemon juice instead of vanilla, might add both next time. Was moist, almost like a banana bread consistency. I did add some extra flour as well to make sure it didn't come out to moist, I think I added 1/2 cup more or so. Yummy, thanks for the recipe, a great way to use up overripe mangos.

Bread Pudding Apple Pie
I made this recipe without the crust b/c I didn't have one and didn't want to put time into making one, so I just greased w/butter a 9 inch pie pan. I only had wheat bread on hand, it worked beautifully. I used 4 slices and 3 apples. Easy, fast and YUM!

Downeast Maine Pumpkin Bread
The spice really over powers the pumpkin. Great texture and moisture, even with 1/2 a cup of apple sauce to replace 1/2 a cup of the oil. With 2 cups of sugar, it is plenty sweet. I've made it a couple times and will use 1/2 of the spice the next time around and then I think it will be perfect.
