Chickpeas in Tomato Sauce With Feta and Wine
Followed recipe precisely except adding the oregano just before the tomatoes. I served it over baby spinach and loved loved the combo. I love how easy this is with so much coming out of cans - only 1 onion to chop! Could probably cut back on the cheese to be healthier without losing much. Even though its a lot, though, I love cheese!

Crustless Spinach Quiche
Very good. I used olive oil and added a red bell pepper, 2 big cloves of garlic, and half a shallot after the spinach. I would add the garlic sooner next time and maybe use a little less - I love garlic, but it was definitely present as a flavor. I also added 1/2 c milk to the eggs. Used two heaping cups of cheese - one part-skim mozz and one of italian blend. Finally, I added a shake or two of nutmeg. I baked in the 350-375 range for 40 minutes. Perfect! I might add bacon next time, but this way is healthier and still really tasty!

Quick Quiche
I used <1/3 c flour, 1 c. milk, and omitted butter entirely. I sauteed a whole yellow onion and 2 cups broccoli in a little of the bacon fat, but stopped before the broccoli was actually cooked. I used 1 c. cheddar with the bacon for the crust and 1 c. in the egg mixture. Definitely not a healthy recipe, but delicious. I used less than the tsp of salt, but found it still too salty -- probably all the extra cheese! Could have had a bit more pepper. Yummy, Yummy! 4 stars because of salt!
