Quick Chicken with Asparagus and Provolone

Made this when we had friends over at a moment's notice. The chicken is soooo juicy and the provolone is a great topper. I waited until there were 5 minutes left to put the asparagus on and then placed the cheese on once it was done cooking. I found that when I put the asparagus in at the suggested time it turned out way too mushy for my taste. But overall this was a HUGE hit and it was a snap to make!

Turkey Goulash

Really good. If you like a lot of sauce, you might want to add a little more than the recipe calls for. Is very easy to play around with flavors/spices in this dish. Melted some cheese on top-delicious!

Mediterranean Chik'n and Artichokes

Quick, easy, HEALTHY and delicious. I fooled my husband-he didn't even know that it was "fake" chicken. Have made this twice already and will continue to make it!

This was quick and easy, but not very tasty. Followed the recipe to the letter...did not care for the flavor. This would need a lot of tweaking to make it better.

Coconut Curry Tofu

This was ok. The flavor was nice andthe combination of veggies was excellent. I didn't fry the tofu quite long enough, so the texture was still pretty mushy. Will be getting extra firm tofu next time and really cook it well before hand. Also, this wasn't quite spicy enough for my tastes. I think it would be good to add some jalapeno peppers next time to heat things up. Overall, I think I'll make this again, with a few changes.

Szechwan Shrimp

This was okay. Wasn't hot enough for my tastes. Added sweet chili pepper sauce which heated it up nicely. I bought a bag of frozen stir fry veggies, which if I had remembered to add them (duh!) would have really added to this recipes. My husband raved, wants it again. But I'll have to play around with it before I'm sold.

Burrito Pie

This is great! I used refried beans with chili peppers in them, which was just great. I would've like a little bit more zip so will use hot taco sauce next time. Otherwise this is a keeper!

Baked Pork Chops I

The chops turned out sooo tender! The sauce was very nicely flavored. My only problem with this recipes is that it is VERY salty (i added almost no salt to the chops). Defin. got my sodium in for the day.

Easy Texas Chili

Yum! I thought the 1/4 cup of chili powder would be too much. I added to taste, and probably added a 1/4 cup after all was said and done. My hubby gobbled this up! Quick, easy, and delicious. Was great with some cheddar and sour cream on top.

Lavonne's Scrumptious White Wine Chicken

This chicken turned out dry and very bland. Possibly letting it sit in the sauce overnight and cooking it longer at a lower temp might improve this. Will not be making this again.
