I'm a nervous Nelly in the kitchen -- I'm always afraid I'm not going to get everything coordinated to get to the table so I'm a big fan of One Dis Meals. I decide on recipes by the number of ingredients, what the ingredients are and what it's going to cost me to cook! My husband did the cooking for about about the first 10 years of our marriage because he got out of work earlier. It was a bonus but I was happy to take over the reins and I always go to him for advice.
My favorite things to cook
One dish meals, and recipes that aren't complicated. Food types don't matter -- chicken, pork, beef as long as it's not complicated!
My favorite family cooking traditions
I grew up in a meat, vegetable and potatoes for dinner household. Roasts on Sunday type meals. Traditional Polish food on holidays. There wasn't much baking going on. My mother was an good cook but nothing elaborate!
My cooking triumphs
Whenever I cook something that my husband's loves and is excited to have again is a triumph for me!
My cooking tragedies
It all started when I was 20 and did not make sure the top was on the blender as I hit the ON button to blend the hot ingredients for Cream of Broccoli soup. My lovely pink polo shirt never looked the same. It's the little tragedies along the way that eroded my confidence in cooking!

Healthy Garden Salad
I had a bag of edamame in my freezer that I wanted to use and so I found this recipe. It is fabulous! I switched the tomatoes out for chopped red pepper because I figured they would hold up longer. That's the only change I made - I even went out and found grapeseed oil and I think it made the salad. Our grocery store sells a version of this for $4.99/pound and this recipe beats it 100%

Spinach and Orzo Salad
This is, without a doubt, my most favorite salad in the world. The combination of the ingredients just play off each other. I have given this recipe out to more people than I can remember. It is a little time consuming with the chopping of the spinach and red onion but it's so worth it.

Grilled Hawaiian Chicken and Pineapple Sandwiches
This was really good - really easy to prepare too! The thousand island dressing added to it so don't skip it. Next time I will eliminate the lettuce and tomato on mine because it sort of overtook the rest of the sandwich and maybe I'll put two rings and two slices of cheese on mine :)
