My favorite things to cook
I love to bake but don't do it unless it is for others or else my husband and I would be huge! I love comfort food like casseroles and grilled food as well. My favorite is asian cuisine but I don't cook it very much. I want to start cooking it more which is why I am always on this site!
My cooking triumphs
I love to create my own recipes. I take ideas and just go with them. Cooking for guests and family members is something I've done more of lately. It is a triumph for me because I have a hard time focusing on more than one dish at a time but I am getting better at it!
My cooking tragedies
I went to a friend's house to cook a big meal for a dinner party. We were hosting it together but she is not a cook. Her oven was seriously messed up and everything burned on the bottom but did not cook all the way through. I was mortified!

I LOVE this chili recipe! I wanted a recipe that was different and would really stand out... this was it! I followed the recipe exactly and it is just amazing. I love how it is rich and spicy, but not too spicy. It is perfect and I am glad I made extra to freeze so that I can have it whenever I want!

Marinated Grilled Shrimp
This is a wonderful way to grill shrimp. The flavor is outstanding! I add some Heinz Chili sauce to the recipe and it makes it even BETTER. The fresh basil and garlic are a must... it is not the same with the dry stuff. I've even used this to cook the shrimp indoors on a grill pan and it is still great.

Slow Cooker Marmalade Curry Chicken
This is a pretty easy recipe and I liked it a lot. However, I made some minor changes. I doubled the chicken stock and by the way, it was still spicy. I love spicy, so I did not mind. Next time I will not double the stock. I thought I needed to since I was using extra chicken. It was the perfect blend of sweet and spicy in my opinion. I added the cornstarch (1 TB) to make the sauce thicker. I also added fresh basil and the juice of half a lemon. It REALLY made the sauce come alive!!!! I served this over orzo pasta with steamed broccoli. It was all so good together. The broccoli was fab in this sauce. I love this recipe b/c it was not full of fat and creaminess like a lot of slow cooker recipes. If you don't like spicy, you should still try this and just cut the cayenne in half. I did it with the full amount and my husband still liked it although he usually won't eat spicy food. I felt like this was a fun way to cook the chicken while getting an extremely healthy veggie incorporated, too.
