Buckeye Balls II
A permanent fixture on my Christmas cookie/candy list. I made a TON of these last year and they went fast! I think I actually like these better than Reese's! A bit labor intensive and messy (anything involving me and powdered sugar is messy), but absolutely delicious. Freezing the peanut butter balls, as I read on someone else's review, would be a good idea, since they do tend to get soft while dipping. Storing them in the fridge is good too, since they soften pretty fast at room temperature.

Pecan Tassies
Made these last Christmas and they were a huge hit! I was pressed for time, so I used phyllo tartlet shells instead of making the shells from scratch, which majorly cut down the prep time. Make sure you keep stirring your filling as you fill cups, as my nuts kept sinking to the bottom. A dash of cinnamon and nutmeg really perks up the filling as well! Mine turned out perfect. The filling from this recipe made a LOT, probably closer to 6 or 7 dozen using phyllo shells.

Yummy Lemon Salmon Burgers
This recipe was a hit with my family. I used plain bread crumbs and dry parsley, but they came out great. The only problem was with the number of servings. I thought the recipe looked awfully small to yield six servings, so I doubled it. Even so, I only came out with 7 burger-sized patties. I served them as salmon patties, not on buns, with the mayo sauce on the side. They were delicious! I especially liked the sauce. I'm not a big fan of salmon patties, but with the sauce these were great.
