I am a married mother of 3, which keeps me pretty busy most of the time. Kids ages are 15(boy), 11(boy), and 8(girl) and my husband acts like a kid sometimes too. We have 1 dog named Max (german sheppard/Collie/Lab mix) 1 Rabbit, and 2 Guinea Pigs. Over the past 6 months I have been trying to add more recipes to my list of meals that I can cook. I usually only have 1 or 2 ways I cook my meats, but am now learning there are so many other ways, and other flavorings. I have used several recipes on the site many times and I think it is a great webpage to bookmark!
My favorite things to cook
Our family likes chicken a lot. The one recipe that we love is Chicken and Rice (white) with Tomato Soup as a "gravy". I also tried for the 1st time a few weeks ago Pork BBQ and it was awesome! My son was begging for it and I finally tried a recipe and it was so awesome. I love using my crockpot to cook beef roasts in. I usually cook the beef roast in a few cans of Cream of Potato soup and then just let it cook slowly for 6+ hours. The meat (even if it is a cheaper cut) just falls apart and tastes so delicious.
My favorite family cooking traditions
My favorite tradition is making filling/stuffing the same way my mother did when I was growing up. I am not a fan of stove-top even though it is quicker than my way. My mom cut her own potatoes/onions and fried til soft then made small pcs with a loaf of bread/ drain pot and onion from oil then mix w/ bread. mix 1 egg and 1/4 cup milk then pour over bread/pot/onion mixture and mix well. heat then in over til hot. top should start to get brown. I put in over at whatever temp my meat is cooking at, so you just have to judge when it is done.
My cooking triumphs
Last Thanksgiving we were to go to my parents (alternated btwn my parents & in-laws) but that morning my dad got really sick w/ a stomach bug. We obviously did not want to go, but was not prepared for any dinner since we were to have it there. My husband was able to find a thawed out turkey at the grocery store that was surprisingly open. He had to get a few other odds & ends for the meal, but I had a lot already in the cabinets. I was able to pull off a wonderful Thanksgiving meal at the last minute & even though my mom is a wonderful cook and would have loved her food, mine was almost just as good.
My cooking tragedies
Up until recently, I stunk at making Pancakes. They would either burn or not be done inside. I have no idea what I am doing differently, but they now cook up great. I also recently burnt frozen pretzel bites with cheese, which is hard to do. I put them in the oven and never set the timer. I thought about them and put a time in my head of when they could be done, but got sidetracked and remembered about 30 minutes past the amount of time they needed to cook. I usually like them more crispy and leave them in 5+ minutes longer, but this time they were awful.
