Rosemary Pasta in Roasted Garlic Sauce
This was good, but not fantastically good. I added an extra clove of garlic, halved grape tomatoes, and a splash of white wine. Quick and easy, great rosemary taste. I'd make it again, and judging by my husband's FOUR servings, he'd like it again.

Barbecued Beef
I made this for St. Patrick's Day because the 4 stores near me were all out of corned beef & my husband opted for bbq beef as his 2nd choice. Obviously I did not serve this with cabbage... Delicious! I'm not a huge bbq beef fan, but this was good. My husband had THIRDS and was excited to take the leftovers to work for lunch. I served it with lemon-almond-garlic green beans, salad & scalloped potatoes.

Baked Potato Soup V
Heavenly! I followed the recipe for the most part, but sauteed an onion and added that to the flour, margarine & milk mixture, and later added low fat cheese, scallions, bacon & a tablespoon of low fat sour cream. This soup does need a bit of additional salt & pepper. I used skim milk to cut down on some of the fat, and replaced the butter with margarine (reduced the amount, too). It was so good that I had it for breakfast the following day!
