About this Cook
I'm single, and cooking for one got old a long time ago; however, I love to cook for my family and friends...
My favorite things to cook
Cheesecake, cakes, cookies, candies. I have made wedding cakes for friends. (They're a lot of work, but worth it for friends...) When I go to a potluck I like to fill in whatever is needed, so I can use one of my tried and true recipes, or try something altogether new. I have more recipes than I will probably ever be able to use...
My favorite family cooking traditions
Thanksgiving and Christmas dinners are filled with family traditions- Mom's family meat dressing- the best! Cranberry-orange relish, and for a week following, the turkey, dressing, and relish sandwiches! And the whole family clamors for Peanut Butter BonBons at Christmastime...
My cooking triumphs
Cheesecakes- Praline Pecan, Peppermint Stick w/Fudge Ripple, and Irish Cream, to name a few of my family's favorites. I won a healthy cooking contest with my Chicken Stir Fry. I particularly like my Tortellini Salad...
My cooking tragedies
"Mint Chocolate Anise Fudge" No really, I was just finishing a batch of "Mint Chocolate Fudge", and had just removed it from the heat to add the vanilla. I was pouring the extract from the spoon into the fudge mixture, when I got a whiff of "licorice". (Ugh!) I realized that I had picked up anise extract at the store rather than vanilla. (I don't even use anise extract!) My roommate suggested that I bring the fudge to work anyway, so I did. Well, of all the things I had brought to work over the years, that was the only thing that wasn't scoffed up! (It has made a great story, however!)

Simple White Cake
This is a nice, dense blank canvas-type cake. (I would have given it 4 1/2 stars, as it wasn't the best, but pretty good.) It isn't too sweet, and it doesn't have much flavor by itself. I put a strawberry/diced mango combo on top and frosted it with whipped cream. I cooked the cake in an 8 by 11 inch glass pan, and it turned out perfectly.

Holiday BAKER'S(R) ONE BOWL Brownies
These brownies are definitely the best! They are chewy, fudgy and ohhh, so easy. Only one bowl makes clean up so easy, too. If you like fudge brownies, this should be #1 in your box!

Awesome and Easy Creamy Corn Casserole
Couldn't get any easier! It was delicious, even using fat-free sour cream.
