Lemon Curd Bars

Best lemon bars I've made in a long time and I've tried many recipes. Easy too! I also really like it with lime curd...goes well with the coconut. Yum!

White Chocolate Raspberry Cheesecake

My husband said it was the best cheesecake I've ever made and that it looked so pretty too! I made it for a co-worker for her birthday and it was a big it. I did as others suggested and made a thicker crust (I used ready-made crushed graham crackers cause I was too lazy to crush my own chocolate cookies) and also doubled the raspberry sauce. Thanks for the recipe. I will make again!

Easy Lemon Cookies

Very easy and very, very good! I did not change the recipe at all and these came out exactly the way I wanted -- lemony, soft and delicious. Received many compliments from co-workers. I will make these many times and liked them much better than lemon bar recipes I've tried.

Baked Potato Dip

Very good! As other suggested, I added ranch dip mix. I also think this is better if it's made at least 24 hours before serving -- it absorbs the flavors better.

Spinach Pasta Salad

I'm sure I followed the recipe correctly, but these seemed salty to me. I like the Good Old Fashioned Pancake recipe from this site better.

Roquefort Pear Salad

Very good. I didn't really measure the salad ingredients and just used what i had and I added too much of the dressing. Next time I will follow the recipe better and not over-dress the salad. But even so, it was a hit and delicious flavor combinations!

Tomato Feta Salad

I used red wine vinegar and fresh mozzarella cheese instead of feta. This version was good but next time I will use feta and possibly add cut up cucumbers too. Perfect summer salad and great way to use garden fresh tomatoes and basil!

Luscious Lemon Cheesecake

I baked this for a work birthday party and it was a hit! I followed the other suggestions of using additional lemon juice and using lemon extract rather than vanilla. I like strong a strong lemon flavor. Also followed the review/advice of "Bakingfetish" -- bake for 10 minutes at 450, 30 minutes at 250, turn off oven but keep cheesecake in the over for 30 minutes, then add the glaze and bake at 350 for 5 minutes, chill for several hours....perfect! First time my cheesecake didn't crack (thanks Bakingfetish!!). I also served lightly sweetened sliced strawberries on the side....blueberries and raspberries also good. YUMMY!!

Kentucky Grilled Chicken

Juicy and flavorful! My guests loved this and asked for the recipe. Did not change anything and I recommend using bone-in chicken as stated. Boneless is just not as flavorful. Takes a little longer to cook but so worth it!

Chocolate Chip Cake Bars

Coconut Poke Cake

My husband loves coconut desserts so made this for him for Father's Day and he loved it. Had a hard time finding the coconut cream (I was looking in the baking section of the store), but our store keeps in the the mixer section for cocktails (I guess you can use it for Pina Coladas?). Anyway, I would have like a stronger coconut flavor...and maybe some chocolate chips on top would be good for those who like chocolate-coconut. Next time I might add the chips and some coconut extract. But hubby loved it and it was easy to make!!

Barbequed Ribs

Delicious! Made this for Father's Day and it was a hit, especially with the men. It was a rainy day so I baked the ribs (instead of grilling) for approximately 45 minuntes at 300 degrees.

Black Bean, Corn, and Tomato Salad with Feta Cheese

I don't see how anyone can eat this with a full cup of olive oil. I used half, as others suggested and it was still too much dressing. I recommend using 1/2 cup olive oil, then add the dressing a little at a time, and check according to your taste. I did love the combination of flavors of the salad!

Hash Brown Casserole I

I used cream of chicken soup since I did not have cream of celery. I took this to a family Easter celebration and everyone loved it! The hot sauce adds just enough kick. My family has already requested that I make this again.
