Quinoa Vegetable Soup

I made the mistake of putting the soup in the slow cooker thinking it would make a flavorful broth after a few hours and then I would add the quinoa...DON'T DO THIS! The soup ended up tasting terrible and I had to throw it out. I will try again making it according to the directions.

This was sooooo good! I didn't have time to slow cook it so I just heated it at 350 in the oven for 45 min...PERFECT!! Will make again and again!!

Chickpea Salad with Red Onion and Tomato

Soooo good! I made some alterations that really made this an addictive salad. I used cilantro instead of parsley, added 2 tbsp of balsamic, used white onion instead of red, organic red plum tomatoes, and to go with it I made a very easy Salsa! The salsa is just a can of fire roasted diced tomatoes, throw that in the blender with some cilantro and half an onion, some salt, sugar, and a tbsp of balsamic and you got yourself an amazing topping for this salad! --Goes great in a burrito too!

I didn't care for it, but everyone else liked it. I guess I'm just not a dark meat fan. Also, Goose really does not feed a lot of people--BE AWARE!

This was great! I used chicken broth and a little bit of water instead of the vegetable and it turned out wonderful. I can't wait to add more to the rice next time I make it, perhaps an egg and some veggies!

Slow-Cooked Chili

I found this recipe to be a good basic chili, but I added a few extra ingredients to make it amazing! I added 2x the amount of chili powder, 2 tbs of oregano, and 3/4 cup of red wine! This really brought out the otherwise bland flavor of the tomato base. I also like a much spicier chili, so I added red pepper flakes, jalepenos, and siracha sauce. YUM!

Rosemary Chicken with Orange-Maple Glaze

Best Chicken Dish EVER!! Seriously, my husband asks for this dish at least once a month, and the best part is that it's so easy to make. I always make it when we have guests because the chicken tastes so juicy and makes me look like a more amazing cook then I actually am.
