Creamy Broccoli Soup

Black Bean and Salsa Soup

I had dried beans which I soaked overnight and then boiled for about an hour. I made this recipe with the beans and it was wonderful.

Some of the peaches I had were bad, so since necessity is the mother of invention, I threw in blueberries and some really good fresh cherries (pitted of course). Took it to a dinner party and everybody was "YUM YUM".

Cilantro, Avocado, Tomato, and Feta Salad

Good combination of flavors, but the lemon juice alone was too dry. I added about 2 tablespoons of really good evoo and it was more moist and tasted better.

Marinated Pork Tenderloin

Followed the recipe exactly. Gtilled the pork and it turned out moist, but the marinade didn't necessary infuse the pork with flavor. Also because of the sugar, you have to watch it on the grill and turn frequently in order for it not to burn.

Sweet Restaurant Slaw

Total keeper. At first I was hesitant to put in all the sugar, but I followed the recipe (except I used 1/2 mayo & 1/2 sour cream instead of miracle whip), and it came out really well. In fact the longer it sat, the better it got.

Fast Rice Pudding

Totally yummy and easy. I have longed long and hard for a good r.p. recipe, and this is it. I added 1/4 sugar instead of a 1/2 cup because other reviewers thought it was too sweet, and a dash of vanilla. Really easy and flavorful. No more Kozy Shack from the grocery store for me.

Absolutely The Best Shrimp Scampi

I too used less flour, and the sauce came out rich, creamy and flavorful. The white wine added a little zing. Next time I might add a little lemon juice as well. Look no further for your scampi recipe!

Grilled Sausages with Caramelized Onions and Apples

This was good, not great. I served it with egg noodles because I didn't have time to make mashed potatoes, and the flavors didn't meld well. Hubby said it was good, 12 year son said not good.

Cranberry Pecan Salad

This is a restaurant quality salad. It's worth the extra trouble to toast the pecans. I used balsamic vinegar because I didn't have raspberry vinegar on hand, and it was excellent.
