About this Cook
I live in New England out in the farm country. As you can imagine, you will never have seafood like you will here and the harvest is everyone's favorite time of the year. The summers are beautiful and the winters are dismal. But I wouldn't want to live anywhere else.
My favorite things to cook
I love cooking with fresh ingredients so I love the summertime. And I am a big fan of fruit and vegetables so I'll add as much of those as I can to any recipe. My favorite thing to bake is pies (which never last long enough) and to cook is probably pasta dishes.
My favorite family cooking traditions
I am an American mutt so I have a mixture of cultural backgrounds. Thus the family traditions that I have are pretty mixed. One thing that we've made for generations is crepes, and we have perfected the art. Most of what else we make is usually a mixture of European cuisines, mostly Mediterranean.
My cooking triumphs
My senior year in college, my roommate and I successfully made a full Thanksgiving dinner for 30+ hungry college kids.
My cooking tragedies
When I was 12 my mother decided that I should take over some cooking responsibilities so she put me in charge of dinner one night. Somehow I managed to light the steaks in the oven on fire while simultaneously making mac and cheese that was both crunchy and mushy beyond being edible. It was 4 years before anyone let me cook in the kitchen again. I’m a good cook now! Honestly!

Roquefort Pear Salad
Bought candied pecans instead of making my own as a short cut. Otherwise this was a great mix of flavors. I served it with pumpkin alfredo pasta for a delightful fall dish.

Cheese Ravioli with Pumpkin Sage Sauce
After reading the reviews that this was a little bland, I decided to spice it up a little. I sauteed spicy italian sausage, mushrooms, and shallots. Then I added the wine and fresh sage and let it reduce by half. Then I added 1/2 a cup of chicken broth and the pumpkin. After a few minutes I added cream, a pinch of cinnamon, a pinch of ground ginger, and 1/4 teaspoon of gound nutmeg. It thickened up nicely and the family went crazy over it! With those changes it was 10 stars. Served it with a Roquefort Pear Salad from this site.

Cajun Chicken Pasta
Great flavor to the sauce. It was spicy, creamy, and interesting. The sauce is also very versatile, so you can made a lot of additions. When I make this again, I think I will add some spicy sausage (it definitely could have used some) and some broccoli or spinach (since it was lacking in vegetables for me). I think I couldn’t really taste a difference from the basil so I would probably add more of that, and also some parsley (to make it taste “fresher”). All around good recipe that can be easily tailored to your preferences.
