Tortellini Minestrone
Delicious!! I made this soup twice...once with nilgai Italian sausage, and once with sweet Italian sausage. I opted to use tomato sauce instead of the ketchup, basil instead of the mixed Italian seasoning, and beef soup base granuals (1 t per c water) instead of the beef broth. I also doubled the cheese tortellini (the kids like a lot of pasta) and it was just fabulous both times. I've been asked for the recipe twice already. Very tasty!!
