Seared Ahi Tuna Steaks

I decreased the cooking time for the fish slightly. Otherwise it was good. The roasted peppercorns really add to the overall dish.

Hot Artichoke Spinach Dip

Not a big fan. It was very creamy, to the point of being watery. The spinach needs to be increased as the artichok flavor dominates. I felt the end product was missing something though not sure what.

Not my favorite. I added more rose water and cardomon, some cinnamon and a pinch of saffron threads soaked in 1 Tbsp of hot milk. However it is still missing something.

Delicious Black Bean Burritos

We like things a little bit on the spicy side so I added a whole green chile, a 1/2 teaspoon of chipolte chili powder and jalapeno infused salt. The addition of corn has a sweetness which compliments the dish well.

Love this! It is not too sweet and my only complaint is that the balsamic vinegar is a bit strong. I would use 2 teaspoons instead of a tablespoon.

Cajun Style Meatloaf

My husband loved this meatloaf. I, however, found it to be on the spicy side. Next time I would use a teaspoon of hot sauce instead of a tablespoon. Also, I used Italian sausage instead of the recommended sausages.

Shrimp Lemon Pepper Linguini

My husband was sceptical about the lemon in this recipe as he thought it may be too strong. However, it is subtle and now he requests it. I have also used chicken instead of shrimp and it turned out quite nice. Do not add extra salt to the recipe. It overwhelms the subtle flavors.
