About this Cook
What's there to tell? I'm pretty boring but like having a life without a lot of drama so that suits me. I love to cook, of course, but I'm not a natural at it so it's hard for me to say that I'm "good and getting better" but changed to that from "beginner" because I don't think that beginner quite fit the bill. I have a brave husband who will try pretty much anything I cook. I like trying to make new things but we still have a lot of "old stand-bys" that we fall back on for our meals. We have a teenaged daughter, three very beloved and utterly spoiled cats and some fish. That's the extent of my household!

??? I just like to try new things I guess. Been trying my hand at baking but I'm not really successful. I'll keep trying, though ...
My cooking triumphs
Pancakes ... my family likes pancakes but I had never made them. My husband makes them from a package mix once in a great while. I saw a recipe in a book and thought I'd try it. Now I actually like pancakes, too! (And my husband requests them often.) We tossed the package mix.
My cooking tragedies
Ah - so many to share, so little space to share them! I'll just stick to my first one: when I was a teenager, I had no interest in cooking at all, didn't know how to cook much of anything ... and didn't get along with my mother. At all. Well, she called me at home from work one day to tell me to get the chicken ready for the frying pan when she got home. I told her I didn't know how to do that. Since she had been making fried chicken regularly all my life, apparently, I should just have learned by eating it. Well, I explained to her that I didn't know how to cut a chicken up into the right pieces and she told me to figure it out. Ok, so I did. We had some really funky pieces of chicken for dinner that night! And, of course, I was never asked to handle that task again. (I would have been open to learning how to do it - honestly - but this was just another reason to hate each other.) All these years later, I still don't know how to cut up a chicken. My husband figured it out

Roast Beef Stuffed Shells
I thought this recipe was bizarre - pasta, roast beef, gravy, CHEDDAR cheese and horseradish?! But I finally made it on the recommendation of others and found it to be surprisingly good! DH absolutely LOVED it. Only changes I made were to cut it down to about 2/3 of the recipe (only two of us eating) and I didn't measure the horseradish, but I think I decreased the amount ... just put about an inch and a half of the stuff in the squeezable container. If I were to rate the recipe down at all, it would only be in the prep time ... draining the gravy off the meat and stuffing it into the shells was a major pita and the prep time for this was far longer than 30 minutes. But then, I'm pretty slow, too. But tips on stuffing shells would be welcome!

Candy Coated Pecans
These nuts are just TOO good! Follow the advice of others and add cinnamon. Also, doubling the coating recipe just makes them that much more delish!

Angel Hair Pasta with Lemon and Chicken
My family really liked this dish though we all thought it was a little bland. Made it a second time and sauteed the chicken with fresh garlic in Italian dressing - also added some red pepper flakes and capers. We topped it all with fresh grated Parmesan cheese. These little adaptations gave it that extra edge that we thought it needed (though next time I will use more capers!)
