Pumpkin Cheese Pie
I used pureed winter squash and added 2 tbls brown sugar, doubled the pumpkin spice and added 1 tbls sherry. Great flavor. I pute the squash through a ricer. Very smooth texture. Too much for 1 9" crust. Used the rest in a vanilla cookie crust. This was very nummy. Will be making again and again.

Creamy Carrot Soup
Soup was very easy and pretty tasty. I cut the heavy cream to 1 cup. I didn't think that it needed any additional salt and forgot to add the rosemary. Loved the color.

Spinach Salad with Oranges
Had to substitute the mushrooms for water chestnuts. The dressing tasted great but was on the oily side. I will reduse the oil next time. May try adding the nuts or croutons next time.
