Pumpkin Wheat Honey Muffins

Yummy! Left raisins & walnuts out, per personal preference. Plan to make another batch today (first batch yesterday) and use less oil. Would be delish using a flour blend I've used in the past: equal parts wheat flour, ground flax seeds and ground oats.

Eggnog Bread

I know, I kinda hate it myself when people modify a recipe so much, but here's my rendition: only had 2 1/4 c eggnog left, so I made up the difference with whole milk, added another egg, since some other reviews said it was dry, doubled the nutmeg, and added 2 t. rum extract (per a different eggnog bread recipe here), and I left out the apricots and pecans and totally forgot about the icing. Turned out pretty good! :) Would make for some yummy muffins!

Slow-Cooked Orange Chicken

Eh... this was okay. Didn't have mushrooms, and used a handful or two of chopped onion. Probably put in too much celery, but I wanted to get it used up. I think the sauce was great on brown rice, and the chicken had a little bit of a tangy taste. My husband didn't know it was supposed to be orange chicken, so it's not THAT strong. He didn't care much for it. Our two little boys liked the chicken, but not the rice and sauce as much. Probably not making this one again--there's another orange chicken recipe on here that I might try.

Slow Cooker Lemon Garlic Chicken II

Good stuff. Added a splash of white wine to deglaze the pan, then added about 1 1/2-1 3/4 cup water. Had to thicken up the sauce on the stove, but still worth it. Chicken nice and tender--loving my crockpot for that!!

Ranch Dressing II

YUM. I'll eat my veggies now!! I hate store bought ranch that maintains the shape of the dish it's sitting in, and doesn't dilute with water added to it--freaks me out a bit. This stuff---excellent!

Dry Ranch Style Seasoning for Dip or Dressing

WAAAAY too much pepper. I might try to make it again, but will use MUCH less (if any) pepper. Seemed like it could have potential if it wasn't killed by the pepper.

Sour Cream Corn Bread

I made this to get some sour cream used up, and at first, thought it wasn't too bad...different... my husband did not like it at all, which left me to eat the rest of it myself, and that turned into a chore! I won't be making this one again.

Honey Mustard Dressing II

We've been looking for a honey mustard dressing similar to what you get in restaurants, and it never occurred to me to look here for a recipe until my husband suggested it last night! I've just made this, it tastes awesome, but am still waiting for him to get off work for his seal of approval, and I think I'll get it!! This is good!

Meatiest Vegetarian Chili from your Slow Cooker

I didn't make this recipe as shown, used it as a starting point to kind of wing it on my own. Allrecipes.com is a great way to break me out of "following" recipes!! I did use the spices as shown, except cut the chili powder and tabasco in half, as others did, and I'm glad for that!

Rick's Special Buttercream Frosting

I scaled it down to 1/4 the recipe, and just used milk in place of heavy cream. I think it would taste better if I had a higher quality vanilla, and used the heavy cream, but my improvisions worked also! A little thin, might not work great for a cake, but was fine with the Clone of a Cinnabon (from this site)rolls I made.

Waffle Cookies II

A little tricky...either kind of hard to get off the waffle iron without falling apart, or if you leave it on longer, it gets a little dark and crispy. Still tastes good though! Quick and easy, but hard to stop eating!

Kettle Corn

Needs a touch of salt. And don't let it rest in the pan after it's popped, or it starts to burn! Edit: Somehow my first time making this was the best--I've been burning it ever since lol. Definitely need to use the right ratios--this isn't something that works by just throwing things in the pot!

My bread collapsed while baking. I don't think that's a problem with this recipe though, bc my machine has been doing that a lot lately...very annoying!! The taste was still good though, just a lot more dense than it ideally should have been.

Zippy Beef Casserole

Seems like it could use a bit of seasoning of some kind... I used egg noodles, no green pepper (didn't have any), and instead of chips, I put French's Onions on top. Would like to try using tomato soup instead of ketchup next time too.
