Married mom of two boys, love spending lots of time with them, and enjoy cooking, but sometimes I really just need a quick and easy recipe that fills us up.
My favorite things to cook
I love baking. Sweets are my favorites to eat, so favorites to make too of course! I like my bread machine (when it doesn't collapse on me), but also love making cookies, cheesecakes, etc.
My cooking triumphs
Probably cheesecake got me going. I was intimidated about making it for the first time a few years ago, now it's a holiday tradition. I have a few tried and true recipes, but am always interested in finding other yummy cheesecake recipes too.
My cooking tragedies
Heh...several years ago, I was going to make homemade hummus for the Superbowl. I had dried beans, and was cooking them. Somewhere I read it could take several hours for them to cook, so I put them on the stove and went to church (I don't usually go either). I came back to a completely smoke filled house, nearly ruined my pot--took a LOT of scrubbing to get all the black off it, and it's still "different" than my other pots, plus that smoke smell in the house lasted for WEEKS. In my cooking experience since then, I still can't help but wonder whether the cemetary right next to our apartment may have played a role in that (I did have another haunting type experience before that, and many neighbors did as well). I've never come close to scorching beans like that in such a short time frame again.

Eggnog Bread
I know, I kinda hate it myself when people modify a recipe so much, but here's my rendition: only had 2 1/4 c eggnog left, so I made up the difference with whole milk, added another egg, since some other reviews said it was dry, doubled the nutmeg, and added 2 t. rum extract (per a different eggnog bread recipe here), and I left out the apricots and pecans and totally forgot about the icing. Turned out pretty good! :) Would make for some yummy muffins!

Slow-Cooked Orange Chicken
Eh... this was okay. Didn't have mushrooms, and used a handful or two of chopped onion. Probably put in too much celery, but I wanted to get it used up. I think the sauce was great on brown rice, and the chicken had a little bit of a tangy taste. My husband didn't know it was supposed to be orange chicken, so it's not THAT strong. He didn't care much for it. Our two little boys liked the chicken, but not the rice and sauce as much. Probably not making this one again--there's another orange chicken recipe on here that I might try.

Slow Cooker Lemon Garlic Chicken II
Good stuff. Added a splash of white wine to deglaze the pan, then added about 1 1/2-1 3/4 cup water. Had to thicken up the sauce on the stove, but still worth it. Chicken nice and tender--loving my crockpot for that!!
