A mom to two kids (11 yo and 9 months) in Colorado, I rarely have as much time to cook as I'd like. I am currently learning to double up recipes and freeze one full meal as often as I can when I cook. I love to bake, but have struggled adapting to baking in high altitudes in the five years I've lived here, and don't do it nearly as often as I used to. I get a great deal of personal satisfaction out of cooking for and entertaining others. LOVE good restaurants and great wines.
My favorite things to cook
So many things! I love Enchilada's with all of the trimmings, Great meatballs, and salads with all of the best meats and cheeses. Also chocolate rugelach at Christmas time and my husbands favorite Tuna Pinwheels and blackberry cobbler for his birthday.
My favorite family cooking traditions
The ton of christmas cookies and pastries every Christmas, creamed rice when I am not feeling well (that's what mom made me) and my comfort food Sausage Beans and Potatos.
My cooking triumphs
Serving family christmas brunches and dinners. I feel so gratified to cook up a fully rounded meal with all of the trimmings and a table set beautifully with China that I can then sit down to.
My cooking tragedies
I cannot cook a whole poultry (chicken or turkey) to save my life. This altitude baffles me! I can cook well, but my husband knows how to jerk my chain by reminding me of 3 hour cooked bloody chickens. Ack! Calling Domino's!
