Soft Oatmeal Cookies

Barely sweet. I didn't squash these and they came out moist and cake-like, but I wish I'd sugared the tops or added more sugar to the recipe. Tasty, otherwise. I'll make these again, but sweeter next time.

Spicy Chicken and Sweet Potato Stew

Incredible! Great eating at dinnertime and even better leftovers. I cheated and used canned sweet potatoes, subbed black beans for kidney, and pre-made mole sauce for the red pepper and cocoa.
