Chocolate Chip Banana Muffins
These muffins were awesome. They were moist and flavorful. I used 1/4 c oil and 1/4 c applesauce. I also used 1 1/2 c of flour and 1/4 c of ground flaxseed. I used plain Greek yogurt. I only used 1/2 c of chocolate chips and that was plenty. I will definitely make these again.

Vegetarian Tortilla Stew
I made this soup for a work carry-in and it was NOT a hit. Why am I giving it 5 stars? The next day, the leftovers were fabulous! This soup gets better with age. My advice, make it the day before so that it can 'cure' in the refrigerator. YUMMY!!
