Mexican Casserole
This is a great casserole. My mother always made this for us when we were kids. My adjustments are: Rotel (diced tomatoes & green chillies) instead of plain canned tomatoes, Ranch Style beans WITH jalepenos, cream of chicken in stead of cream of mushroom, 1 pkg taco seasoning instead of the chili powder, and after the meat is browned, instead of simmering the meat & seasoning with water, I used the drained juices from the Rotel. My boyfriend is a VERY picky eater & this is his favorite. I personally like to add onion to the meat, but he doesn't eat onions. If you don't mind the calories, this casserole can't be beat!
