Mama's Tomato Gravy

I am giving this recipe two stars because it was easy to make. My family did not like this at all. The tomato gravy I grew up eating was a beef based or cream based gravy with tomatoes chopped up in it. For my family the tomato flavor was too over powering. I much prefer the beef based gravy with chopped tomatoes and biscuits. I made this recipe as written and I will not make it again.

Blueberry Pound Cake

I did not put the sugar in the bottom of the pan as it called for (wished I had) and I used less blueberries. To me this cake is not dense enough for a pound cake. I think I will use oil instead of butter the next time I make this cake. Overall good simple cake recipe. Will make again.

Blueberry Crumb Pie

I made this pie with too many blueberries. Think mountain with a crumb topping, so the berries did not cook in the center. It still came out very good. I will make this again and reduce the amount of berries I used. You can't ask for an easier recipe!

Mock Coconut Pie (Spaghetti Squash Pie)

I liked this however my hubby did not. It also did not taste like a coconut pie. The custard for lack of a better word was excellent, but the squash just didn't go over well. I think the texture was what my husband did not like. The taste was good and it is a unique way to get veggie haters to eat them. I followed this recipe as directed.

Annie's Fruit Salsa and Cinnamon Chips

Everyone loved this salsa! I made it the night before going to my dads for Father's Day. I used strawberries, kiwis, raspberries, and a gala apple. To cut down on sugar (diabetic) I used Splenda and the juice of half a lemon to keep the apple from turning brown. The next day I made the chips as per directions. For some reason my chips were tough. I followed the instructions but my chips were hard to chew. They tasted good just tough. I don't know if it was the flour tortillas or me but it's the reason for four stars instead of five. The fruit salsa is a solid five stars.

Apple Brownies

Very good and easy recipe. Family loved it. I used two large granny smith apples and pecans instead of walnuts. I also reduce the amount of cinnamon to 1/2 tsp. because we do not like a strong cinnamon flavor. I will make this again.

Delicious Ham and Potato Soup

Very good! I made this for my Grandmother because she can only eat soft foods and she hasn’t been eating much lately. I chopped the ham into small bite size pieces and removed them to puree the potatoes then added the ham back to mixture and finished the cooking process. The ham was very tender and she could eat it with no problems. I also made a pan of cornbread to serve along with the soup. She ate a bowlful with a slice of bread. Yeah!! Maybe now she will stop losing weight and gain back what she lost. Thanks for this recipe!!!

Slow Cooker Chicken and Dumplings

Three stars because it was easy to prepare, but I did not like the biscuits. Tasted too much like canned biscuits instead of dumplings. I will make this again with my own dumplings.

Pork and Green Chile Casserole

This is a good basic casserole. I used red kidney beans because I didn't have black beans and cream of mushroom soup for the same reason. I also cooked the brown rice in chicken stock before adding to mixture. I added a teaspoon of taco seasoning along with the cumin and instead of water I put 1/4 cup chicken stock. I will make this again with more seasonings.

Banana Crunch Cake

I'm not quite sure what happened with this recipe. I followed the recipe with the exception of pecans instead of walnuts. The cake turned out dry and crumbly. I will not make this cake again.

Applesauce Custard Pie

I used organic no sugar added applesauce, a heaping 1/3 cup Splenda, salted butter, and lightly sprinkled McCormick’s Cinnamon and Sugar on top and it turned out great. Just right if you are craving something sweet and you are a diabetic.

Apricot Bread

I followed this recipe and did not like the texture or taste of the bread. It was heavy and crumbled when cut. I also did not like the apricots and will try this recipe with pineapple to see if the taste improves. Three stars because it was an easy recipe.

Soft Oatmeal Cookies

Great cookies! I followed the recipe except I reduced the amount of sugar by 1/2 cup. Cookies tasted great. I also added raisins and pecans. Husband loved them. I will make these again.

German Chocolate Cake Frosting II

I only had a 5oz. can of evaporated milk on hand so I added enough half and half to finish out the cup needed. I also used brown sugar and added a pinch of salt. Tasted and looked better than store bought. The cake did not last long, family inhaled it. I will make this frosting again. Excellent!!!!

Raspberry and Almond Shortbread Thumbprints

The family did not like these cookies. The almond flavoring was to overpowering. I tried the cookies with vanilla flavoring and the family still would not eat these cookies. Over all the taste of the cookie was bland. I also did not care for the texture of the cookie. I used homemade blueberry, peach, and pear preserves as these were the only ones available. Will not make these again.

Hamburger Steak with Onions and Gravy
