Sarah's Banana Bread Muffins
These were very easy and so good! I used 3/4 cup of sugar, substituted softened butter for the oil and salt, and doubled the walnuts. They were done baking in about 24 minutes. Wonderful!

Baked Garlic Parmesan Chicken
I added a bit of onion powder to the oil/garlic mixture, and used about twice as much oil as called for. It turned out great! The second time I made it I used this recipe for a Chicken Parmesan base: cooked in an oven-safe skillet, took it out of the oven after 20 minutes, then transferred it to the stove and drenched it with tomato sauce and mozzarella cheese. Turned out wonderfully.

Awesome Broccoli Marinara
I improvised a bit, as I only had frozen broccoli and regular diced tomatoes on hand, and it turned out wonderfully! I used a 16oz bag frozen broccoli, and added around 1 Tbsp dried basil and 2 Tbsp balsamic to the tomatoes. I thawed the broccoli a bit in the microwave and simmered it for an extra couple of minutes, and it was an excellent companion to our Chicken Parmesan. Will make again!
