Excellent recipe. Was quick and very easy to make. Eliminated the fennel seed because I didn't have any, and substituted the tomato paste for a can of diced tomatoes. Otherwise, I stuck to the recipe. Was still good without the fennel. Tenderizing the meat at the beginning is key to the pork being so tender and yummy! Entire family loved it. Will make again. Excellent! I did half brown sugar, half white. Added blueberries....can't believe how delicious it is! Definitely will keep this recipe around!

My family and I loved this incredibly easy and quick recipe! I made it exactly to the recipe, except I left out the raisins. Delicious and I liked the consistency. And I swear, the bread pudding was almost better the next day. I will most definitely make this recipe again!
