Baked Sweet Potatoes

Made these last night after searching for a healthy recipe for sweet potatoes. I am training for a half marathon and this type of carb is excellent. I didn't use the olive oil, instead sprayed them with Pam used Mrs. Dash, salt and pepper for the spice. Threw them in the roasting pan with "Juicy Roasted Chicken" also from this sight. It was really tasty!! Will definitely make again.

Olive Oil Roasted Eggplant with Lemon

This was great, I used Pam spray instead of the olive oil and Mrs. Dash instead of salt and pepper. Even my picky 10 yr old ate it and liked it.

Slow Cooker Pozole

This was a homerun recipe! Substituted a can of red enchilada sauce for the dried chile/broth combo. Added a small can of salsa verde instead of the chopped chiles. I used all drumsticks (about 5 or 6) and I put them in frozen. Cooked it on 6 hours high and the meat fell right off the bone.

Parmesan Chicken II

This was pretty tasty, I took others advice and parboiled the chicken first, then baked at recommended temp for about 20 minutes. Also added oregano and about 1/4 cup of italian style bread crumbs. Served with butter herb mashed potatoes and garlic toast. Will definitely make again!

Honey Mustard Grilled Chicken

Excellent recipe!! I used the costco skinless, boneless breasts, and used worchestire instead of steak sauce, olive oil mayo instead of regular. This cooked so quick and moist on my George Foreman Grill. Paired it with fresh, grilled zuchinni spears. Super easy and super tasty.

Slow Cooker BBQ Pork Chops

I used the thick, boneless pork chops from Costco and a really yummy hawaiian bbq sauce. I thought the other reviews saying the meat was tender but dry sounded funny, because doesn't that sound contradicting? But strangely, mine came out just like that! The meat was tender, easily shredded with a fork but dry. Hmmmm... My hungry marine loved it, I made pull porked sandwiches and he went back for seconds and thirds. I didn't care for it too much.

Easy Batter Fruit Cobbler

This was the dessert for last night's Sunday Family Dinner!! We "healthy-fied" it because, that's what we do sometimes! Used 4 cups of chopped up, fresh nectarines (skin on), over ripe fresh strawberries and frozen blue berries. Substitutes (all measurements remained the same): whole wheat flour instead of a/p flour evaporated milk instead of reg milk (none in the fridge) splenda instead of white sugar This came out sooo yum!! The crust was more of an actual crust (kinda flat, not cake-y at all) We loved it!!

Chicken Breasts with Balsamic Vinegar and Garlic

This was super simple and soooo tasty!! Cooked it tonight for the first time. Omitted the flour per the popular/helpful reviews, chopped up mushrooms with my SLAPCHOP! lol (I always wanted to use that in a sentence) and served it up with some broccoli and corn on the cob and a side salad. Recipes like this make eating healthy fun and easy!

This drink is the bomb.com!! LOL I took another reviewer's suggestion and added a splash of cranberry juice to cut the too sweet flavor. I make sure to always keep the ingredients for this drink on hand!

Asian Chicken Noodle Salad

I really wanted to like this recipe and I can understand why the ratings are high. My 9 yr old thought it was weird with the noodles, and I really was banking on him liking that, since he loves those nasty top ramen. The salad dressing was good, but nothing spectacular. My bf ended up eating it and liking it, but probably wouldn't make again.

Baked Soy Lemon Chops

Super easy and sooo good. I reduced the soy to 1/4 c. of low sodium and hit the marinade with a splash of srichacha hot sauce!! Sooo good, I sent some to my dad who had my mom call me the next day to ask for the recipe!

Delicious Peanut Butter Cookies

I made this as a dessert for a family dinner. I used the chunky peanut butter and substituted half a cup of wheat flour for a/p regular flour. The cookies were moist and very flavorful. Thank you for the recipe.

Greasy Chicken

This was a no brainer for my low carb diet!! I followed the recipe pretty much word for word. The thighs had skin and bones. I only use low sodium soy sauce. At the last 10 minutes I threw in some fresh broccoli florets. Easy, quick and yummy! Thank you for the recipe!

Chicken-and-Pasta Bake with Basil

This was a pretty simple recipe and very tasty too. I took the advice of previous raters, sautee'd the frozen chicken tenders, and threw the broccoli in the last few minutes with the pasta. Also, I doubled the sauce and used a mix of parmesan and mozzerella, what I had on hand. This was a really good Sunday dinner, next time I will add some salt & pepper (forgot to) and maybe some red chili flakes.

Blueberry Cream Cheese Pound Cake II

Very easy to make despite the fact the batter was soo dense it burned the motor out of my hand mixer!!! I made a lemon glaze instead of the blueberry on and that plus the cake itself was way too sweet!! Probably wouldn't make this again.

Italian Sausage and Stuffing

This was soo easy for me tonight. My dad had grilled the sausages on the weekend and sent home the left overs. I used a box of stove top and a whole can of beef broth, threw in some carrots and diced red bell pepper. I only had mozzerella cheese so I threw that in as well. Looking forward to having the left overs for lunch tomorrow!

This recipe is amazing!! I used the canned tomatoes with the italian seasonings along with the fresh chopped roma tomatoes. Served with angel hair pasta and garlic toast and salad. Soooo good we had it twice in one week!

Chicken and Biscuit Casserole

I used the refrigerated biscuits on top, substitued some of the chicken broth with some heavy cream (about 1 cup), made sure the celery, onions and carrots were all roughtly the same size. My 8yr old loved it, sent the left overs to my dad's and now he wants it once a week! This is delish!! Thank you!
