Spinach and Orzo Salad
I substituted red wine vinegar for balsamic (so that my salad wouldn't be brown like others mentioned) and sunflower seeds for pine nuts (more affordable ;) and added sundried tomatoes. Instead of combining all the ingredients at once, I only combined the cooked orzo, sundried tomatoes, red onion, basil, pepper, oil and vinegar to marinate in the fridge. And, every time I wanted a serving, I would toss the marinated orzo with fresh spinach, crumbled feta, and sunflower seeds. Every serving of the salad was crunchy and flavourful, even days later. I served with pita, hummus and kalamata olives.
