My Great Grandmother who came over from Norway, taught me and my mother how to make these cookies. In addition to the other tips, we dusted the cookies with powdered sugar when we were done.

Ricotta Eggplant Rolls
I have made this dish thousands of times. I ALWAYS get great reviews. It even surprised me when my children ate it and even ask for it. Thanks for such a wonderful recipe that is now included in my recipe box!
