Quinoa and Black Beans
Delicious and nutritious. I added a can of Rotel tomatoes for some extra spice. My teenaged boys both enjoyed this with some shredded cheese. An easy and inexpensive recipe.

Black Bean and Corn Quesadillas
I've made this multiple times and it's always a "5", even without the addition of the sugar. I use frozen corn instead of canned and any type of bean I have around. I also microwave the tortillas after filling them and fold them in half to melt the cheese. My kids love them, my parents loved them and my vegetarian friends love them as well.

Favorite Sloppy Joes
I found this recipe to be very good but thought it needed a little brown sugar. Also, I cooked it in a crock pot and it cooked all day so it was a little too dry for me and I added a can of Rotel tomatoes at the end. My teens and I really liked these sloppy joes.
