Homemade Black Bean Veggie Burgers
I made these for lunch today, and they were a hit. They are a bit bland, which for my crew is probably a good thing. I doubled the bread crumbs and used just one egg. Once everything is well mixed, it's just the right consistency to form into little burgers. I cut the spices in half and added salt and pepper because I didn't have hot sauce. They cooked perfectly on a baking stone. I made them into sliders, topped them with swiss cheese and pico de gallo and served them on grilled wheat rolls. Delish. The next batch will be for the freezer so we can make them for a quick snack or meal.

Black Bean and Corn Quesadillas
So tasty. I just made these for lunch with minor changes. I cooked the onions for a couple of minutes then added a clove of minced garlic. I used fresh corn and homemade salsa. Also added cumin to the bean/corn mixture and stirred in a couple pinches of salt just before serving. Extra good with corn tortillas. This was a hit with everyone around our table. I think I might add pinto beans next time too.

Elegant Orzo with Wilted Spinach and Pine Nuts
I can't get enough of this. I made it for lunch today and wished for more when I was finished. I made it in smaller proportions since it was just for me and added some tomatoes roasted with olive oil, salt, pepper and garlic, and it was perfection. I prefer this with fresh parmesan rather than the feta. Seems that adding the pine nuts along with the spinach keeps them from toasting a bit too much. So good and so healthy. BTW, I barely wilt my spinach so plenty of nutrients remain, and I love it that way personally.
