Baked Potato Soup V

This soup was much too thick. I served it for lunch on Christmas day to 12 people (it does make a lot) but half didn't come close to finishing. It is missing something-maybe a can of chicken broth would add flavor; and I would definitely cut back on the amount of potatoes used. I have made Baked Potato Soup III from this site and it is better--should have stayed with that recipe.

Cocktail Meatballs IV

These were awesome. Used frozen meatballs and put the whole thing in the slow cooker on "low" for a few hours. They disappeared!!!

Baked Apples on the Grill

This was very good. They took a little longer on my grill--about 40 minutes. I used McIntosh apples which provided just the right amount of tartness. A nice finish to a dinner of grilled pork tenderloin and rice pilaf.

Slow-Cooker Chicken Tortilla Soup

This was really great. I added the chicken breast to the slow cooker, uncooked, and removed it at the end and shredded it. I also added a can of Rotel tomatoes instead of the onion and peppers, which worked well. I also added more chicken broth instead of the water. I cut the tortillas into strips and fried them in a small amount of oil in a frying pan. This was a great dish to come home to.

Turkey Brine

I've brined many turkeys using various solutions, but never made gravy with the drippings as I do with a conventional roast turkey. The turkey tasted pretty good and was moist, but I thought the gravy tasted weird. Same with the stuffing. I was really looking forward to this based on the great reviews, but thought it was just OK.

Newport Clam Chowder

This is just yummy. Made a few modifications-took the advice of others and added some bacon which gave a great flavor. Also used 2% milk instead of half and half and this soup was still nice and thick. No fresh clams available so I used canned clams and added them at the end to not overcook. Will make again!

Baked Potato Soup I

This is a great cold weather soup. My son, a baked potato soup afficionado, loved this. I have used the pre-cooked bacon a few times and did not find it offensive as did some other reviewers. Also, have microwaved the potatoes and it still tasted great.

Linguine with Scampi

I have made this recipe many times and think I have tweaked it to perfection. I cut the butter to 1/2 cup and add a 1/3 cup olive oil and 1/3 cup chicken broth. Double the lemon juice and add capers and some parmesan cheese at the end. Use angel hair pasta. This stuff is great.

To Die For Blueberry Muffins

These were absolutely wonderful. I made two batches of the muffin batter and only one of the crumb topping and the amount was just perfect. I also used a cup and a half of blueberries and a bit of vanilla as recommended by others on this site. These were just as good the next day.

Best Beef Dip Ever

This was really great! I used the suggestion of several others and reduced the amount of soy sauce by 1/2. I also just smashed a few cloves of garlic and put in a sprig of fresh rosemary so I really didn't need to strain the jus. Definately a keeper!!!

Beer Butt Chicken

This was great! I cooked three 5# chickens and basted them throughout with the pan drippings. Took about 2 1/2 hours over low heat on the gas grill and they were great!! I used disposable cake pans as the cookie sheets seemed a bit flimsy. Will cook again.
