Cheesy Chicken Meatballs

These were fabulous! They were really garlicky though (and I love garlic) and I used plain cream cheese. I am sure they would be way too garlicky with the garlic cream cheese. I made a double batch and froze the meatballs on a cookie sheet, then transferred the balls to ziploc bags. I put enough in each bag for one meal for the 3 of us. Baked them for about 15-20 minutes at 400 degrees from frozen and they were perfect! (I did check the internal temp- very important to get correct) Great recipe!

Broiled Tilapia Parmesan

Whole-Wheat Chocolate Chip Cookies

I used 3 cups of my fresh ground pastry flour, no AP flour and these turned out fabulous! The only other change I made was to sub butter for margarine because I don't touch the fake stuff. They did spread a bit due to the butter but not bad and the taste was amazing. I never expected to like WW cookies as much as regular cookies! The only change I would make for next time is to reduce the sugar a bit, I thought they were plenty sweet.

Whole Wheat Banana Nut Bread

My hubby said, "this is as good as ANY banana bread I've ever had". We loved this recipe and I love that it's so healthy. I give it to my 2 year old for a snack or breakfast and he loves it!

Spicy Kielbasa Soup

I made some of this a few months ago, and stuck a jar of it in my deep freeze and forgot about it. I was looking for a quick meal today, found this, reheated it and it's SO yummy & full of flavor. It's more filling thatn a traditional veggie soup, too, since it has kielbasa and beans. I'll be making this again!

Stuffed Mexican Peppers

These are AWESOME! I only had 2 peppers so I saved the remaining meat for tacos for lunch the next day...well, my DH, son and I ate all the peppers, then wanted more so we dug into the extra filling too! SO good & easy! Will make again for sure.

Burger or Hot Dog Buns

I thought these were great. Nice and light. I did use bread flour and vital wheat gluten (I do in all my bread) so I don't know if they would have been quite as good otherwise, but I thought they turned out perfect. Not too sweet like some recipes I've tried for buns.

Poppy Seed Salad Dressing

I thought this was really excellent! Mine was a bit oniony tasting, not sure if I had a strong onion (it was red) or just too much but I might cut it back next time so I don't have horrible onion breath! I did but the sugar back a bit, not much, I thought the sweetness was good.

Seven Layer Magic Cookie Bars

Classic- perfect. I made these exactly as directed and had no trouble with sticking like some reviewers. I did spray the pan with Pam and used a meat pounder to pack down the graham cracker crumbs. I think this helps the bars to come out easier- I do this for my cheesecakes too.

Best Breakfast Cookie

I am so happy with these! A great snack that's easy to take on the go and I feel better about giving these to my kids than processed snacks. I used applesauce instead of prune puree because that's what I had on hand, and 1/2 white whole wheat flour.

Morning Glory Muffins

These are our new favorite muffin....and we've tested a lot! So delicious and full of healthy stuff. The only change I make is to use 1.5 cups white whole wheat flour and 1 cup AP flour.

Peanut Butter Vegetable Chicken Soup

I'm sorry...I hate to give a bad review but we just did not care for this at all. I thought it sounded delicious but it was very bland, the PB didn't add much at all. I followed the directions exactly other than to saute the veggies together in a bit of oil first- which should have helped add flavor. I feel this soup is crying out for some curry, and some spice- seems like a weak imitation of Thai food without it.

Multi-Grain Pancakes

I've made this recipe several times and my family loves it. Great fluffy texture, and healthy! I love to mix up the batter the night before, stick in the fridge and then it's all ready to go for the morning! I do think it needs a bit of salt which is why I gave it 4 stars.

Chai Tea Mix

This is okay....needs some modifications. I made it with 1.5 cups sugar as suggested since I don't normally drink sweet drinks. Also used all unsweetened creamer and added the vanilla. This way the sweetness was about perfect. (I shudder to think of how sweet it would be with all the sugar and sweetened creamer!) I liked the amount of spice with the extra spices suggested but the problem I had with it was that I felt it was too watery, and the grit bothered me. So then I put it through a fine sieve, and to combat wateriness I made it using 1/2 whole milk and 1/2 water instead of just water. That really made it much better. So all in all, a good recipe, just needed a bit of tinkering so I couldn't give it more than 3 stars.

Butterscotch Oatmeal

Wow, this is sweet. I made the recipe as is and while the flavor was delicious, and the texture was perfect, it was just waaay too much sugar for breakfast. I should have followed the reviewers advice, but I like to make recipes as originally written the first time. Next time I will use half the amount of sugar.
